Making chicken tetrazzini casserole is simple. I love being able prep it in the morning or the night before so that when it’s time to eat, I can pop it in the oven, and dinner is served.

  1. Prep: Preheat the oven to 350 degrees. Spray a 9×13-inch casserole dish with cooking spray and set aside. In a large pot, cook the pasta according to the directions until al dente. Drain, then place in the prepared baking dish.
  2. Sauté and Stir: In a medium-sized saucepan, add olive oil, mushrooms, garlic, and peas. Cook until tender, then whisk in the flour and cook for another minute.
  3. Make the Sauce: Add the cream of chicken soup, half-and-half, and chicken broth to the saucepan. Add salt and pepper to taste. Let simmer until it starts to thicken, then add the chicken and mix to incorporate.
  4. Combine: Add the sauce to the spaghetti and toss until coated. Spread in your 9×13-inch pan.
  5. Make the Topping: Mix the parmesan cheese, bread crumbs, and butter in a bowl, then spread the mixture on top of the casserole.

Tetrazzini Tips and Variations

The great thing about this chicken tetrazzini casserole is you can make it to suit your tastes. Here are some ideas to get you started.

  • Vegetables: You can leave out the peas or the mushrooms or both. You could also add other veggie like onions, broccoli, bell pepper, potatoes or any of your favorite veggies.
  • Protein: This is a great casserole to make with leftover turkey. Replace the chicken with your leftover turkey from Thanksgiving. You could also use ham, pork, beef, or sausage.
  • Condesned soup: You can replace the cream of chicken with cream of mushroom soup cans. You can also replace the condensed soup and use my homemade cream of chicken soup.

Freezer Meal Instructions

You can make chicken tetrazzini casserole as a freezer meal! I like making a couple of batches, freezing them and pulling them out as I need. After you have gone through step 5, cover it with plastic wrap and then aluminum foil, and freeze. Then, when you are ready to have it for dinner, follow the instructions below!

  • Heat the oven to 375 degrees Fahrenheit.
  • Cover the dish with foil, place it directly into the preheated oven from the freezer, and bake for 50-60 minutes until the dish is heated completely through.
  • Remove the foil in the last 10 minutes of baking. 

How to Store Leftover Chicken Tetrazzini

Leftover casserole is especially good for reheating the next day. By then, all of the flavors have melded together, and your kids will love having something warm and hearty after school.

  • Refrigerator: Store leftovers in the fridge in an airtight container for up to 5 days.
  • Reheat: Warm individual servings in a microwave-safe dish for 30-seconds at a time until heated through.

The ground turkey bakes up so juicy and tender that you won’t believe it’s ground turkey. My recipe is perfectly seasoned with onion, garlic, and Italian breadcrumbs. The texture and moisture in these baked turkey meatballs will blow your mind! You’ll devour every bite and wish you had leftovers!

These baked meatballs are amazing all on their own. Place them on a mound of noodles and smothered in one of these incredible sauces and they will be divine. Ground Turkey vs Ground Beef

Which one is better for you? Both turkey and beef are great sources of protein with a variety of vitamins and minerals. Turkey is generally lower in saturated fat than beef and so is a better choice for heart health. All of the health benefits of depend on the cut and quality of turkey and beef, but ground turkey is generally a healthier option.

Ingredients for Turkey Meatballs

These baked turkey meatballs use simple ingredients that you may already have on hand. Ground turkey is easy to find at any store and is a healthy alternative to beef. Your family will love these meatballs so much that they won’t even miss the beef!

  • Ground Turkey: This can be found near the ground beef.
  • Italian Bread Crumbs: I love that these bread crumbs are already seasoned.
  • Onion: Dice one small onion.
  • Eggs: The eggs act as a binder.
  • Milk: Adds a bit of moisture and helps keep it all together.
  • Garlic: Minced or finely chopped.
  • Salt and Pepper: Season to taste

How to Make Baked Turkey Meatballs

These turkey meatballs are super easy to throw together. Roll them up and bake them for juicy perfection. They are so good and a healthier alternative to beef meatballs. You’ll want to keep them in a regular rotation for weeknight dinners!

  1. Combine Ingredients: Preheat the oven to 400 degrees Fahrenheit. Spray a medium baking dish with non-stick spray and set aside. Combine all of the meatball ingredients into a medium bowl.
  2. Mix: Mix together until incorporated.
  3. Roll: Roll the mixture into 1 ½-2-inch balls and place in the prepared baking dish.
  4. Bake: Bake for 20-25 minutes, until the internal temperature of the meatballs reaches 165 degrees Fahrenheit and the tops are lightly browned.

Tips For Moist Baked Turkey Meatballs

I have lots of good tips to help you achieve perfectly moist and delicious turkey meatballs. It’s so easy to make homemade meatballs and this ground turkey version is the BEST!

  • Moisture: Turkey is leaner than beef so can dry out quickly. If you find your meatballs are too dry add a tablespoon of olive oil to the mixture. Overcooking the meatballs can also dry them out, so be sure to remove them from the oven once they reach 165 degrees Fahrenheit. 
  • Chopping: I love to throw the onion and garlic into a small food processor and pulse it several times. This is a quick way to mince them up and make them easy to add to the meatball mixture.
  • Breadcrumbs: Instead of Italian breadcrumbs, you can substitute plain breadcrumbs and add 1 tablespoon of Italian seasoning. Panko breadcrumbs can also be used!
  • Uniform Size: Keep the meatballs the same size as much as possible. This will ensure that they cook at the same rate and some won’t be underdone or overdone. You can use a cookie scoop or a kitchen scale to help keep them uniform.
  • Don’t Overmix: This can cause the meatball mixture to break down and become tough. It can also make the meatballs hard to form and turn them into meat patties instead of meatballs.
  • Flavor Variations: There are many ways to make these meatballs sing with even more flavor if you wish. Add a couple of teaspoons of finely chopped fresh herbs, ⅓-½ cup of parmesan or other grated cheese, or a dash or two of spices that will complement your dish. They are so easy to customize and make how you wish.

Storing Leftover Baked Turkey Meatballs

These baked turkey meatballs are so easy to store and freeze for a later time. I love to make a double batch and freeze the leftovers for busy weeknights.

  • In the Refrigerator: Store leftovers in an airtight container or sealable zip lock bag. Refrigerate for up to 5 days.
  • To Reheat: Reheat them in the microwave for a few minutes in the microwave until warmed through. You can also reheat them in the air fryer at 390 degrees Fahrenheit. 
  • In the Freezer: Allow the cooked meatballs to cool to room temperature. Place on a cookie tray and cover loosely with plastic wrap then freeze for 2 hours. Transfer the partially frozen meatballs to a freezer-safe gallon zip lock bag. Freeze for up to 3 months. Thaw overnight in the refrigerator or warm them straight from the freezer in the microwave at 50% power till heated through.

We love baking unique cookie recipes at our house! If you’re looking for a cookie that is truly special, give these Biscoff cookies a try! Here’s how easy they are to make:

  1. Prep: Preheat the oven to 375 degrees Fahrenheit and line 2 baking sheets with parchment paper. Set aside.
  2. Beat Butter and Sugars: Add the butter and both sugars to the bowl of a stand mixer and beat on high speed with the paddle attachment for 3-4 minutes, until light and fluffy.
  3. Combine Eggs and Vanilla: Add the eggs and vanilla and mix on medium speed until combined.
  4. Add Dry Ingredients: Add the flour, cornstarch, baking soda, baking powder, and salt to a medium bowl and whisk until combined. Add the dry ingredients to the wet and mix until just combined.
  5. Stir in Mix-ins: Fold in the white chocolate chips and cookie butter cookie pieces by hand. Cover the bowl and chill for 30 minutes.
  6. Make Cookie Dough Balls: Scoop the chilled dough with a medium cookie scoop onto the prepared baking sheets, leaving 2 inches between them. Drizzle melted cookie butter over the top of each scoop of cookie dough.

  • Room Temperature: Store leftover cookies in an airtight container at room temperature for up to 7 days. 
  • Freezing Baked Cookies: Baked cookies can be stored in an airtight freezer container or bag and frozen for up to 3 months. Leave them at room temperature for an hour or so to thaw, or heat the cookies one at a time in the microwave in 15-second intervals until warmed through. 
  • Freezing the Dough: The unbaked cookie dough can be scooped into balls on a parchment-lined baking sheet and placed in the freezer for 2-3 hours. Once the cookie dough balls are fully frozen, transfer them to a freezer bag or container. Bake directly from frozen at 375 degrees Fahrenheit for 12-15 minutes, until the edges are golden brown and the centers are still gooey.

Baking soda vs baking powder….what is the difference? I’m here to teach you the basics of each so that you can improve your baking skills. Learn the whys, hows, and when they’re important to achieving delicious recipes.

Baking powder and baking soda are key ingredients in so many classic recipes! Baking soda is a must when baking cookies. Sometimes I use both, like in our favorite copycat Crumbl cookie recipe. And I couldn’t make my homemade pancake mix without the help of baking powder because it makes them SO fluffy!

Baking Soda vs Baking Powder

Baking soda and baking powder are both chemical leavening agents. The ingredient in a recipe makes dough or batter rise through a chemical reaction. However, they are NOT the same! They have notable differences, so let’s compare baking soda vs baking powder and break it down!

What is Baking Soda?

Baking soda is powerful! It is 3 times stronger than baking powder! In the world of science, baking soda is known as a base. It will create a reaction when it comes in contact with an acid. This also translates into the world of baking! This reaction produces a carbon dioxide gas, and the bubbles from this reaction give a light texture in baked goods. Recipes that use baking soda will also call for some type of acid to create this chemical reaction.

Acids That React With Baking Soda

We’re all familiar with the reaction of baking soda and vinegar but many ingredients react in recipes to create carbon dioxide. Here is a list of acid ingredients commonly used in baking:

  • Vinegar
  • Citrus Juices
  • Buttermilk
  • Sour Cream or Yogurt
  • Cocoa Powder (Not Dutch Process)
  • Brown sugar
  • Cream of Tartar
  • Molasses or Honey

Irish Soda Bread is a bread recipe that relies on the reaction of buttermilk and baking soda to rise. My fun Wacky Cake is another example of this reaction. The baking soda and vinegar in the recipe give this cake the fluffiest texture and it’s SO yummy!

Too Much Baking Soda?

Using too much baking soda in your recipes without neutralizing it with an acid will result in a strong metallic flavor from the baking soda. Some people might think the more baking soda you use the more rise you’ll get, but that isn’t how baking soda works. It needs to be just the right amount and has to have an acid to react and neutralize it.

What is Baking Powder?

Baking powder actually has baking soda in it! It also contains another acid like cream of tartar or cornstarch that helps neutralize the baking soda. This means there isn’t a need for another acid for baking powder to react. Baking powder reacts in two different ways, and if you’ve ever wondered why the container says “double-acting”, here’s why:

  1. Moisture: Baking powder first becomes active when it gets wet. Air bubbles are created when it comes in contact with water, milk, or any moisture in the recipe. This is why most recipes need to be baked right away while the chemicals are still active.
  2. Heat: Baking powder also becomes active when it’s exposed to heat during the baking process. As the ingredients reach a certain temperature, the baking powder creates lift and helps the baked goods rise and become fluffy! 

My Grandma’s Perfect Fluffy Pancakes are the perfect example of this reaction. The baking powder in her pancake recipe reacts with the heat of the skillet making them fluffy and soft! Another example is this delicious Ricotta Cake! The baking powder makes it so light and fluffy as it bakes.

Why Use Baking Soda AND Baking Powder?

It is necessary to use both baking soda and baking powder in certain recipes! Using both can improve the texture and the flavor of your baked goods. It’s fun to see what happens when you use either baking soda, baking powder, or both! Check out the results below!

  1. Improve Texture: Some recipes use both to improve the texture. Baking soda alone doesn’t lend enough rise to some recipes. Instead of just adding more baking soda, which will only lead to a sour metallic taste, you add baking powder to give extra lift. My Twinkie Cake uses both and the texture is fluffy and delicious!
  2. Flavor: Using both can also improve the flavor of your recipes. Sometimes you need both because you want the tang of an acid in your recipe to come through in the finished product. If you only rely on baking soda for rise, it will neutralize the flavor of the acid you’re using. Using both allows the tangy acidic flavor of say buttermilk or lemon juice to come through. Try this Glazed Lemon Bread and you’ll see what I mean!

Can You Substitute One For the Other?

In short, I wouldn’t recommend it! It’s tricky to do without affecting the rise, texture, and flavor of your baked good. It’s better to follow a recipe the way it is written to get the best results!

Do Baking Powder and Baking Soda Expire?

Yes, they expire! Here are some tips for storing and keeping baking powder and baking soda fresh!

  • In the Cupboard: It is best to store baking soda and baking powder in an airtight container. Baking powder already comes in an airtight container, but baking soda should be removed from the cardboard box and stored in an airtight container. Store them both in a dry, cool place like a cupboard. Storing in the Refrigerator is not recommended.
  • Expiration Tips: It’s helpful to write the date you open them on the container. Store unopened baking soda at room temperature for 18 months. After opening, store at room temperature for 6 months. Store unopened baking powder at room temperature for 6 months. After opening, store at room temperature for 3 months!
  • How to Test the Freshness of Baking Powder: Add about ¼ cup of warm water to a bowl along with 1 tablespoon of baking powder. Stir the mixture and it should become a bit fizzy. If there isn’t any fizz then it’s bad.
  • How to Test the Freshness of Baking Soda: For baking soda, it’s the same test, but instead of warm water, use plain white vinegar. The mixture will be very fizzy and bubbly when it’s fresh. If it isn’t very active then your baking soda has gone bad.

These raspberry muffins are moist and delicious, filled with plump fresh raspberries and topped with a sweet, crunchy streusel topping! They are perfect for a warm breakfast, brunch, or as an after-school or work snack. Your family will be begging for more, so don’t expect them to last long!

Muffins are one of my favorite snacks to keep around for my kids. Whether it’s monkey bread muffins, easy banana muffins, or blueberry muffins, they love coming home from school, heating up a plate, and devouring them!

Raspberry Muffin Recipe

Back when I was first married, my neighbor made raspberry muffins with a streusel topping. She was nice enough to share them with us and I wanted to recreate that for my kids, so I tweaked the recipe a bit and cam up with something you are going to LOVE!

By adding buttermilk and almond extract, I turned it into something truly special. The results were amazing! You should totally bake these while your kids are at school, so when they come home and take that first bite, you’ll see the pure joy on their faces!

What Ingredients Do I Need to Make Raspberry Muffins?

You will most likely already have all of the ingredients needed for this recipe. However, if you don’t have buttermilk, don’t worry—simply follow my instructions to make buttermilk at home. Additionally, be sure to scroll to the bottom of the post for the exact measurements of the remaining ingredients.

  • All-purpose flour: Gives the muffins a light, tender crumb and provides structure.
  • Granulated Sugar: Adds sweetness to balance the tart raspberries.
  • Baking Powder: Works as a leavening agent, which causes the muffins to rise.
  • Salt: Enhances all of the flavors in the muffins.
  • Vegetable Oil: Adds some fat which makes the muffins moist and tender.
  • Egg: Works as a binder and gives the muffin structure.
  • Buttermilk: Adds moisture and gives the muffins a sweet, tangy flavor that complements the raspberries and balances out the sweetness.
  • Vanilla Extract: Gives a warm aromatic flavor and scent.
  • Almond Extract: This takes the flavor profile to another level!
  • Raspberries: The star of the show! They add moisture and texture. You can use fresh or frozen raspberries!

Streusel Topping

  • Granulated Sugar: Adds sweetness and a caramelized crunch that makes this one of my all-time favorite muffin recipes!
  • All Purpose Flour: Binds the butter and sugar and also helps keep the form during baking.

How Do I Make Raspberry Muffins with Streusel Topping

Preparing these muffins for the oven only takes 15 minutes! Combine the dry and wet ingredients, fold in the raspberries, and they’re ready to go in the oven!

  1. Prep: Start by preheating the oven to 375 degrees Fahrenheit. Then spray a muffin pan with pan spray or line it with muffin liners. Set aside.
  2. Combine: In a large bowl, start by whisking together the dry ingredients. Then, add all the wet ingredients except the raspberries and mix until combined. Fold in the raspberries by hand.
  3. Streusel: Prepare the streusel by mixing the sugar, flour, butter, and salt until fully combined.
  4. Fill Pan: Scoop the batter into the muffin pan until each well is filled ⅔ of the way full.
  5. Distribute streusel: Sprinkle the streusel evenly over the top of the muffins. Bake for 25-28 minutes, or until the tops are golden brown and a toothpick comes out clean from the center. Let the muffins cool completely before serving.

Tips and Variations for Making Bakery Quality Muffins at Home

Follow these simple instructions to help your raspberry muffins turn out just the way they do at any bakery, or better! I also share some ideas for ways to switch things up!

  • Pan Spray: If you are using a muffin pan without paper liners, it’s wise to use a pan spray with flour in it to prevent sticking. Otherwise, you can spray the pan with regular pan spray, then dust each well generously with flour, tapping out the excess for an even coating.
  • Frozen or Fresh berries? You can use frozen raspberries instead of fresh. Don’t thaw them. Toss the frozen raspberries in ¼ cup of the dry ingredients reserved from the bowl before you mix in the wet ingredients. Fold in the frozen raspberries and the ¼ cup of dry ingredients into the batter just until evenly incorporated in the muffin batter.
  • Mini Muffin Tin: You can make these muffins as mini muffins! Use mini muffin liners, or spray a mini muffin pan well with pan spray as directed in the tip above. Fill ⅔ of the way full with batter, and then sprinkle a teaspoon of streusel on top. Bake for 10-13 minutes or until a toothpick comes out clean.
  • Variations: Feeling creative? Try adding in some white chocolate chips, blackberries, or lemon zest.

How to Properly Store Raspberry Muffins

If you are lucky enough to have leftover muffins, then follow the steps below. Additionally, I recommend freezing a second batch to have muffins on hand when you need a quick, delicious snack!

  • At Room Temperature: They can be stored in a container on the counter for up to 5 days.
  • In the Refrigerator: Leftover raspberry muffins can be stored in an airtight container in the refrigerator for up to 8 days.
  • In the Freezer: You can freeze baked muffins for up to 6 months. Thaw at room temperature by leaving the muffins in an airtight container on the counter for a few hours.

This easy creamy Tuscan dip comes together in minutes! Mix the ingredients all in the same bowl, then spread it into a baking dish or oven-safe skillet to bake! Follow my step-by-step instructions below.

  1. Preheat Oven/ Mix Cream Cheese and Sour Cream: Preheat the oven to 375 degrees Fahrenheit. Spray a 1-quart baking dish or oven-safe skillet with non-stick cooking spray then set aside. Cream together the cream cheese and sour cream.
  2. Add Seasonings and Cheeses: Add the garlic, garlic powder, salt, mozzarella cheese, parmesan cheese, and Italian seasoning.
  3. Fold in Spinach and Sun-Dried Tomatoes: Fold in the sun-dried tomatoes and spinach until combined.

Making creamy Tuscan dip is so quick and easy to make and makes the best leftovers. It’s also great to make ahead then store it until you’re ready to rewarm it for your party!

  • In the Refrigerator: After baking creamy Tuscan dip, allow it to cool completely. Cover tightly with plastic wrap, or store it in an airtight container in the refrigerator. It will last for about 2-3 days.
  • To Reheat: There are a few ways to reheat leftovers. The easiest option is to reheat it in the microwave or on the stovetop until warmed through. Ingredients Needed

Making your own teriyaki sauce for this sheet pan teriyaki chicken and vegetables is the best way to get the most flavor. Its easy to make so keep it this recipe on hand to use in other recipes like stir fry.

  • Soy Sauce: This umami sauce creates the base for the teriyaki sauce. It’s a must.
  • Brown Sugar: Gives the teriyaki sauce it’s sweet flavor!
  • Sesame Oil: This is a finishing oil, so it will go perfectly as drizzle over the vegetables too.
  • Garlic cloves: Mince the garlic so it will release the flavor.

  • Red Onion: Feel free to slice or chop the red onion. Green onion would also be delicious!
  • Red Bell Pepper: Sliced red bell pepper adds a sweet crunch of texture. Any variety of bell peppers would work.

Sheet Pan Teriyaki Chicken With Vegetables Recipe

The best part about this dish is how little effort it takes, plus you’ve got one amazing meal your entire family will love! Enjoy it alone or serve it over your favorite rice or noodles. Either way, you choose, this sheet pan recipe is much easier and healthier than takeout!

  1. Prepare: Preheat oven to 400 degrees Fahrenheit. Spray a large sheet pan with pan spray and set aside.
  2. Combine the Sauce Ingredients and Bring to a Boil: Add the soy sauce, brown sugar, sesame oil, garlic, ginger, cornstarch, and water to a medium saucepan and bring to a boil over medium heat.
  3. Simmer the Sauce: Reduce the heat and simmer for about five minutes, until the sauce has thickened.

  • Chicken: This recipe calls for chicken breasts but you can use chicken thighs. The chicken breasts should be the same size and thickness so that they cook evenly.

Storing Leftovers

This sheet pan teriyaki chicken with vegetables makes delicious leftovers for lunch the next day. It’s also great for meal prep! Follow my steps below for storing and reheating leftovers.

  • In the Refrigerator: Store leftovers in the refrigerator in an airtight container for up to 5 days.
  • To Reheat: Reheat in the microwave for 2 minutes before stirring it around and heating it for an additional 1-2 minutes, until fully heated. Try to avoid overheating the chicken or it will end up rubbery.
  • In the Freezer: Freeze the chicken in one bag and the vegetables in another. Add the sauce to a small bag and store all of them in a large freezer bag or in an airtight container.
  • To Cook From Frozen: You can cook everything directly from frozen, but it will leave some extra liquid in the pan. For the chicken to be fully cooked from frozen you should anticipate an extra 5-10 minutes of cooking time. If you have time, I recommend thawing the chicken and sauce in the refrigerator overnight before cooking, though you can use the vegetables frozen or thawed.

Honey lime chicken enchiladas are sweet, savory, and SO tasty! It’s a twist on traditional enchiladas with a hint of honey and lime to brighten the flavors. The honey is subtle but noticeably delicious! This recipe starts with an easy chicken filling made in the crockpot. Once the chicken is cooked and shredded, it marinates in a honey lime marinade before assembling. After you try this enchilada recipe, you’ll see why it is one of my favorites. 

Enchiladas are so versatile and there are so many ways to change the flavors and ingredients. Try these white chicken enchiladas, these tasty buffalo enchiladas, or cream cheese enchiladas.

Ingredients to Make Honey Lime Enchiladas

You will love the flavors in these enchiladas and most of the ingredients are common things to have on hand. Follow the exact measurements in the recipe card below.

  • Onion: I like to use sweet onions but if you prefer others you can substitute.
  • Chicken Breasts: The recipe calls for a total of 3 chicken breast halves.
  • Chicken Broth: Helps tie everything together and bring out the flavor.
  • Chili Powder: Gives that little kick that everyone loves.
  • Garlic: I use about 2-3 cloves and mince them.
  • Salt & Pepper: Of course, to taste! 
  • Honey: Adds that bit of sweetness to make the enchiladas incredible!
  • Lime Juice: Adds delicious zing to the chicken!
  • Flour Tortillas: If you prefer corn tortillas you can use those instead.
  • Monterey Jack Cheese: I normally use Monterey Jack but if you have others on hand this is a simple substitution.
  • Green Enchilada Sauce: Can choose to add more than what’s listed depending on personal preference. 
  • Heavy cream: Helps thicken the sauce.

Honey Lime Chicken Enchiladas Recipe

These honey lime have a few steps, but if you plan ahead they are easy to make! I like to cook the chicken in the crockpot in the morning or even the day before. Then marinating and assembling is simple to do.

  1. Cook the Chicken in the Crockpot: Add the chicken, onion, chicken broth, chili powder, garlic, and salt and pepper to a crockpot and cook on low for 8 hours, or on high for 3-4 hours.
  2. Shred and Marinate the Chicken: Once the chicken can easily shred, remove it from the crockpot and shred it all. Drain all of the remaining liquid except ¼ cup. Add the shredded chicken, reserved liquid, honey, and lime juice to a large bag and set aside to marinate for 30-40 minutes.
  3. Preheat/ Prepare the Pan: While the chicken is marinating, preheat the oven to 350 degrees Fahrenheit and spray a 9×13 pan with pan spray. Spread ½ cup of enchilada sauce evenly over the bottom of the pan.
  4. Fill the Tortillas: Fill the tortillas with chicken and both kinds of cheese, saving about 1 ½ cups of cheese to sprinkle on top.
  5. Make the Sauce: In a small bowl, combine the remaining enchilada sauce with the heavy cream.
  6. Top With Sauce and Cheese Then Bake: Pour the sauce on top of the enchiladas and sprinkle with the reserved cheese. Bake for 30-35 minutes, until the cheese is browning and bubbling. Serve hot and top with your favorite enchilada toppings.

Tips and Variations

These honey lime chicken enchiladas can be time-consuming, but don’t let that intimidate you! The steps are very easy, and SO worth it in the end when you take your first bite! Here are my tips and variations below to make this recipe even easier and tastier.

  • Chicken: Speed up the prep time and grab a rotisserie chicken at the store or use any leftover chicken you may already have. This greatly reduces the amount of preparation and makes this meal an easy weeknight dinner that you can throw together quickly. Toss the chicken with ¼  cup of chicken broth, the seasonings, honey, and lime juice, and allow it to marinate for at least 30 minutes before assembling your enchiladas.
  • More Lime Flavor: For more lime flavor, use the zest of 1-2 limes in addition to the lime juice in the marinade.
  • Tortillas: You may use corn tortillas instead of flour if you prefer, but you will likely need twice as many because they are much smaller.
  • Make Ahead Tips: The chicken can be prepared at any time and frozen after it is shredded and marinated. I like preparing the chicken in a large batch that will make 3-4 pans of enchiladas and freezing most of it for when I need it later.

More Ways to Cook the Chicken

You don’t have to have a crockpot to cook the chicken! Here are other ways to cook the chicken. These methods are also much faster!

  • Over the Stovetop: you can boil the chicken in a large pot with a little extra chicken broth and the rest of the ingredients until cooked through and can easily shred for about 20-30 minutes.
  • In the Instant Pot: Add the chicken, chicken broth, and seasoning to the Instant Pot and cook under high pressure for 10 minutes. Once it is done cooking, manually release the steam and then carefully open the Instant Pot. Shred the chicken and marinate as directed.

Storing Honey Lime Chicken Enchiladas

These honey lime chicken enchiladas make great leftovers! It’s also a great meal to make ahead and freeze for later. Here are my tips for storing these delicious enchiladas.

  • In the Refrigerator: Store leftovers in the refrigerator covered tightly with plastic wrap or foil. Alternatively, you can transfer the baked enchiladas into an airtight container. Store for up to 5 days.
  • To Reheat: Reheat individual portions in the microwave in 30-second increments, or reheat the whole pan in a 350 degrees Fahrenheit oven for 10-15 minutes, until the center reaches 165 degrees Fahrenheit.
  • In the Freezer: Prepare the entire pan of enchiladas as a freezer meal by using a foil baking pan. Cover tightly with foil and then wrap the entire pan in 3-4 layers of plastic wrap. Store for up to 3 months.
  • To Thaw: Remove from the freezer and bake with the foil on for 50-60 minutes at 350 degrees Fahrenheit before removing the foil and baking for 10 more minutes, until the cheese on top is melted and browning and the center reaches 165 degrees Fahrenheit.

The world’s best baked beans take just over an hour to bake. Prepare the beans in the morning so that it’s ready to throw in the oven when you need them. This is easy because then you can bake them while you make the main course.

  1. Preheat Oven/ Cook the Bacon: Preheat oven to 350 degrees Fahrenheit. Fry up the bacon and crumble in pieces. Remove the bacon with a slotted spoon and discard some of the grease. 
  2. Cook the Green Pepper and Onion: Returning to the same skillet, add the diced green pepper and onion to some of the bacon grease then cook until tender.

  • Picking Asparagus: Pick the freshest stalk possible! The perfect stalk should be a vibrant green color. If it’s dull, then it is likely overripe. The stalks should be firm to the touch and not flimsy. Choose a stalk with a uniform size so that each piece cooks at the same rate.
  • Flavor Variations: Although salt and pepper are my go-to seasonings for asparagus, switch it up with lemon pepper seasoning or garlic salt! Sometimes if I’m feeling fancy, I’ll add a dash of Italian seasoning to add flavor. Try adding some lemon zest to bring out the lemon flavor even more!
  • Toppings: Try garnishing the top with some chopped cooked bacon, slivered almonds, or pine nuts. And if you like a little kick then add a sprinkle of red pepper flakes!
  • Do I Need to Trim My Asparagus? I always recommend trimming off the white ends of the stalk because it is very tough and bitter. Trimming also helps to make each stalk a uniform size.

  • In the Refrigerator: Store the roasted and cooled asparagus in an airtight container for up to 3 days.
  • To Reheat: Using an air fryer is always my favorite way to reheat leftover veggies. Pop the asparagus in the air fryer for 2-3 minutes at 350 degrees Fahrenheit. You can also reheat them in the oven for 3-5 minutes at 350 degrees Fahrenheit.

  • Preheat oven to 400 degrees Fahrenheit. Arrange the asparagus in a single layer on the baking sheet.
  • Toss the asparagus with the olive oil then sprinkle with salt and pepper.
  • Roast for 8-10 minutes or until the asparagus is crisp on the outside and tender in the center.
  • Toss in the garlic, parmesan and lemon juice. Add more if desired. Serve immediately.
