Ingredients to Make Mozzarella Stuffed Meatballs

The meatball base uses staple ingredients, just make sure to have your cheese on hand because it’s the BEST part of this recipe! Follow the recipe card below for exact measurements.

  • Ground Beef: I prefer lean ground beef for this recipe!
  • Italian Breadcrumbs: Give the texture and structure of the meatballs.
  • Parmesan Cheese: Adds a delicious cheesy flavor to the meatball mixture!
  • Egg: The egg helps add structure and bind the meatball mixture together.
  • Onion: Finely minced onion for added flavor.
  • Garlic: Fresh garlic always.
  • Oregano and Basil: Add delicious flavor using Italian seasonings.
  • Salt and Pepper: Helps balance and enhance the flavors.
  • Mozzarella Cheese: Cubed fresh mozzarella gives the best melty results but I list other options below!
  • Homemade Marinara: Use jarred marinara or try my homemade recipe because it is fantastic!
  • Spaghetti Noodles: For serving, but use any kind of noodles you like!

How to Make Mozzarella Stuffed Meatballs

Homemade meatballs are so easy and fun to make! Who wouldn’t love melty cheese oozing out of their meatballs? The best part is that you pop them in the oven and then warm them in your favorite sauce. Easy peasy and the whole family will want these meatballs on the weekly dinner rotation!

  1. Preheat oven to 375 degrees Fahrenheit and line a baking sheet with parchment paper. In a large bowl, add the ground beef, bread crumbs, parmesan cheese, onion, garlic, egg, oregano, basil, salt, and pepper.
  2. Mix until everything is just combined.
  3. Take about 1 ½ tablespoons of meatball mixture in your hand and start forming it into a ball. Take one piece of the diced mozzarella, pop it into the center of the meatball, and continue to form a ball around the cheese. The meatballs should be 1 inch in diameter.
  4. Place the finished meatballs onto the prepared baking sheet pan. Once the meatballs are all formed, place them in the oven and bake for 15-20 minutes, flipping halfway through.
  5. While the meatballs are baking, cook the noodles according to the package directions. Remove the cooked meatballs from the oven.
  6. In a large saucepan or pot, add the meatballs and marinara sauce. Cook over medium-high heat until the sauce is heated evenly and the meatballs are all coated in sauce. Remove the meatballs and sauce from the heat and serve with the cooked pasta.

Tips and Variations

Follow my tips for these tasty mozzarella stuffed meatballs! I also have some fun variations below you’ll love!

  • Stuffing Tips: The meatballs should be about 1 to 1 ½ inches in diameter. No mozzarella should be peaking through the meat once the meatball is finished forming because the cheese will ooze out.
  • Cheese: Fresh mozzarella cheese is best and it melts perfectly, but you can switch up the cheese if you prefer. Pepper jack cheese smoked gouda, or even cheddar cheese would work well!
  • Switch up the Sauce: You don’t have to use a marinara sauce to serve these meatballs. Alfredo, pesto, or a carbonara-style sauce would be delicious as well!
  • Make a Meatball Sub: These meatballs are perfect make a great meatball sub! My kids love it when we have leftovers for this very reason because it’s so yummy!

Storing and Reheating

These mozzarella stuffed meatballs stay juicy and moist and are perfect for lunch or dinner throughout the week. Follow my instructions below for storing and also reheating leftovers. 

  • In the Refrigerator: Store in an airtight container then place in the refrigerator. Your meatballs will last for up to 4 days.
  • In the Freezer: Store in a freezer bag or airtight container for 1-2 months. Thaw overnight in the fridge before reheating.
  • To Reheat: Reheat these meatballs in a skillet over medium heat until warmed through. Add more marinara if needed. You can also reheat these meatballs in the microwave until warmed through.

What are Sweet Corn Tamale Cakes?

The sweet corn tamale cakes are my family’s favorite appetizer to order when we eat at Cheesecake Factory. If you’ve never had them or don’t have a Cheesecake Factory in your area, you’re in for a real treat with this homemade tamale cake recipe!

These start with a simple batter that includes corn and masa flour (or cornmeal), which is formed into patties and pan-fried until crispy golden brown. Then, mix together a southwest-seasoned mayo and garnish the cakes with all your favorite Mexican-style toppings. Not only does this dish taste amazing, but the presentation is colorful and vibrant!

Ingredients You’ll Need

These corn cakes have the perfect crispy texture on the outside, and then they get a ton of fresh flavor from the sauce and toppings! Here are all of the ingredients that you need. Check out the recipe card at the bottom of the post for all of the exact measurements!

Corn Cakes

  • Corn: For this recipe, we’re processing some of the corn in a food processor and then keeping some of it in whole kernels.
  • Butter: This will help bind the ingredients, add richness, and make these super crispy when fried.
  • Sugar: For a hint of sweetness.
  • Salt: To enhance all the flavors.
  • Flour: All-purpose flour and Masa Harina flour (or cornmeal) form the base for these corn cakes.
  • Olive Oil: For frying the cakes.

Tamale Cake Toppings

  • For the Sauce: Combine mayonnaise with Southwest seasoning or taco seasoning for extra spiced flavor.
  • Salsa Verde: Use store-bought or homemade salsa verde for serving.
  • Pico de Gallo: Pico de Gallo, also called salsa fresca, is made with fresh tomatoes, onion, jalapeño, lime, and cilantro. For convenience, you can buy it pre-made from the store.
  • Sour Cream: Adds creaminess and a tangy taste to the cakes.
  • Avocado: Provides the topping with extra creaminess and flavor.
  • Cilantro: Garnish with fresh cilantro!

How to Make Tamale Cakes

This sweet corn tamale cake recipe is easy to make and so incredibly tasty. These will be a hit no matter if you serve them for a light meal or a fun appetizer!

Corn Cakes

  1. Prep Corn: Thaw and drain the frozen corn. Pulse 1 cup of corn in a food processor until smooth. Add the pulsed corn to a large bowl, with the remaining 1/2 cup whole corn kernels.
  2. Make the Batter: Add the all-purpose flour, masa flour, salt, butter, and sugar. Use a pastry cutter or two forks to mix the butter into the rest of the ingredients until the batter forms. Add one teaspoon of additional masa flour at a time if the batter is too sticky.
  3. Form into Patties: Shape 1/2 cup of the batter into a small patty measuring about 3 inches in diameter. 
  4. Fry: Heat a large skillet with olive oil over medium-high heat. Add the corn cakes and cook for 5 minutes until golden brown. Carefully flip each cake and cook for 5 minutes on the other side. Alternatively, you can bake the corn cakes in the oven for 20-25 minutes, flipping halfway through the baking time.
  5. Make the Sauce: Mix the mayonnaise and Southwest seasoning in a small bowl.
  6. Sauce in Bag: Spoon the mixture into a small Ziplock bag. Snip a small corner of the bag using scissors to drizzle on top of the corn cakes.
  7. Plate the Corn Cakes: Pour the salsa verde on the bottom of a large plate, and then place the corn cakes on top of the salsa verde. Garnish the top of each cake with sour cream, avocado, pico de Gallo, a drizzle of the seasoned mayonnaise mixture, and chopped cilantro. Enjoy!

Sweet Corn Tamale Tips and Variations

Here are some simple tips and ways that you can change up this recipe to make these perfect every time you make them!

  • Corn: Thawed frozen corn works best! It gives the corn cakes the perfect texture. Canned corn can be substituted, just make sure to drain it well.
  • Masa Harina: This Mexican flour can be found at most grocery stores. If you can’t find it, then corn meal is a great substitute! If the batter is too sticky, then I suggest you put extra Masa Harina on your hands to help shape the cakes.
  • Skillet vs Oven: I love the crisp outer edge from cooking the cakes in a skillet and they also cook faster. However, you can cook these in the oven for 20-25 minutes, flipping halfway through the baking time.
  • Southwest Drizzle: When I recreated this recipe, I wanted to simplify every step! Any taco or Southwest seasoning will work for this southwestern sauce. I love the added chipotle flavor in the Southwest seasoning. You can add a splash of milk to thin it out if you prefer. Or make my Southwest Dressing to have on hand when you make the corn cakes!

Leftover Sweet Corn Tamale Cakes

These sweet corn cakes are best served warm and right away! I don’t recommend storing leftovers if the corn cakes have been sitting in the verde with toppings. Here’s how to store only the corn cakes!

  • In the Refrigerator: Place leftover corn cakes in an airtight container. Store in the fridge for up to 3 days!
  • To Reheat: Pop leftover corn cakes in the microwave and heat until warmed through. You can also reheat leftovers in the air fryer at 360 degrees Fahrenheit for 3 minutes on each side. Top with toppings and enjoy!

You’ll find fresh calamari in the seafood department at most grocery stores. We love it so much that we always have to order it, if we see it on the menu! It’s also easy to make at home.

You can find fresh calamari at most grocery stores in the seafood department. You can also find frozen squid in the freezer aisle. The key to making sure your calamari is tender is to first soak it in a milk and lemon juice mixture. Then, you’ll bread it with a simple mix of flour, cornstarch, and seasonings. Fry it up in just minutes to a perfect golden brown. Its crispy goodness will have you coming back for seconds and thirds!

Ingredients You’ll Need For Crispy Fried Calamari

The ingredients for this calamari recipe are simple. Other than the calamari, you probably already have what you need! It’s all about the ratio of flour to cornstarch to get that delicious crispiness. Exact measurements can all be found below in the recipe card.

  • Calamari Rings: You can use either calamari rings that are sold already cleaned (seen below) or whole squid, which you cut into tubes before use.
  • Milk and Lemon Juice: Soaking the calamari in a mix of whole milk and lemon juice will make it tender and also help the breading adhere to it.
  • Flour/Cornstarch: For the breading, you’ll need a mix of all-purpose flour and cornstarch for golden brown crispiness. The flour is what will fry up golden brown and the cornstarch will give the exterior that crispy crunch.
  •  Dried Dill: Gives the perfect complimentary flavor to the squid.
  • Paprika: Adds a nice peppery flavor that gives a bit of heat.
  • Salt & Pepper: To taste!
  • Oil: Vegetable oil for frying.
  • Lemon Wedges: Serve with lemon wedges to squeeze a bit of fresh lemon juice over the top for brightness in every bite.

How to Make Fried Calamari

Frying crispy calamari is much easier to make at home than you might think! The steps are simple, and the calamari only takes about 3 minutes to fry!

  1. Prep: Prepare the calamari rings by thawing them if they are frozen. Pat the rings dry and place them into a bowl.
  2. Coat with Milk and Lemon Juice: Pour the milk and lemon juice over the rings and stir to combine and coat the rings evenly in the milk mixture.
  3. Mix: In a separate bowl, whisk together the flour, cornstarch, salt, dill, paprika, and pepper.
  4. Dredge in Flour Mixture: Remove the rings from the milk mixture, allowing excess liquid to drip off. Then, toss them in the flour mixture. Next, place the breaded calamari rings onto a plate or sheet pan. Meanwhile, prepare a second plate or sheet pan by lining it with paper towels.
  5. Fry: Heat about an inch of oil in a large skillet over medium-high heat. When the oil is hot carefully place the battered calamari into the hot oil and fry them for about 3 minutes until they are golden brown.
  6. Finish Frying and Serve: Once you finish frying the calamari, place them onto a paper towel-lined plate or sheet pan. Work in batches until you’ve cooked all the calamari, then serve it fresh with lemon wedges.

Tips for Making Fried Calamari

Don’t be intimidated to fry your own calamari at home! This tasty appetizer is something that you can easily make in your own kitchen, and it will be even better than any you get in a restaurant! Here are a few tips and ideas to help you along the way:

  • Calamari to Use: You can use calamari tubes and cut them into rings for the calamari rings. You can also use mixes with tentacles for this recipe. Thaw the squid all the way before you start breading and frying for the best results.
  • Use the Air Fryer: To air fry, follow the steps up until you fry them. Instead, spray the breaded calamari with oil and place them into your air fryer basket. Air fry at 400 degrees Fahrenheit for 4-5 minutes. 
  • Serving Sauces: Calamari goes great with Marinara Sauce, Tartar Sauce, or Tzatziki Sauce
  • Thaw First: If you are using frozen calamari rings, thaw them completely before using them.

How to Store Leftover Fried Calamari

If you’re lucky enough to have any leftover calamari, here are my best tips for how to store them and reheat them to make sure they are crispy when you reheat them.

  • Refrigerate: Store leftovers in the fridge in an airtight container for up to 3 days. 
  • Reheat: I recommend baking or air frying the leftovers to get them crispy. To air fry, cook at 350 degrees Fahrenheit for 3-5 minutes. If using the oven, heat in the oven at 400 for 3-5 minutes.

Ingredients Needed to Make Shrimp Egg Rolls

This shrimp egg roll recipe is made with fresh ingredients and loaded with authentic Asian flavors. The filling consists of sautéed vegetables, shrimp and plenty of flavorings. Serve them as appetizers or as the main course with fried ricevegetable stir fry and/or this asian cucumber salad. They’re always a hit!   • Vermicelli Noodles: Soft, thin rice noodles add heartiness to the filling.
  • Sesame Oil: For tossing the noodles, sautéing the vegetables and adding rich flavor.
  • Green Cabbage: Shredded cabbage adds crunch and a nice texture.
  • Carrots: Shredded carrots for additional crunch and hint of sweetness.
  • Green Onions: Chopped green onions add a mild onion flavor.
  • Garlic: Freshly minced garlic for extra flavor.

How to Make Shrimp Egg Rolls

Don’t be intimidated to roll the egg rolls, check out the visual guide below for step-by-step instructions. It’s actually super easy! Here’s how everything comes together:

  1. Cook the Vermicelli: Cook the vermicelli according to the package directions, rinse under cold water, then lightly toss in a little sesame oil to keep them from sticking together. Set aside.
  2. Sauté the Veggies: In a large skillet heat the sesame oil over medium-high heat. To the skillet add the cabbage, carrots, and green onions. Saute the vegetables until they become tender, about 5 minutes.
  3. Add the Remaining Ingredients: Add garlic, ginger, oyster sauce, soy sauce, shrimp, salt, and pepper. Saute everything together until the shrimp has turned pink and cooked through. Remove the shrimp and vegetable filling from the heat and set aside.
  4. Prep Work Station: Meanwhile, prepare a clean work surface with egg roll wrappers, a small bowl of water, the filling, and the vermicelli noodles.
  5. Fill the Paper Wrappers: Working one at a time, place a wrapper with a corner facing you, then add some of the shrimp and vegetable filling along with some vermicelli noodles into the lower ⅓ of the wrapper.
  6. Roll: Roll the corner up over the filling, fold the sides in, and continue rolling using a little water on the edge of the wrapper to seal it closed. While the egg rolls are being filled, heat 2 inches of oil in a large skillet over medium-high heat.
  7. Fry: Once all the egg rolls are filled, start frying them in batches. There should be space between all the egg rolls while they fry. Fry the egg rolls for 3-4 minutes, until golden brown.
  8. Cool: Remove the fried shrimp egg rolls from the pan, and set them aside on a paper towel-lined plate to cool while you fry the rest of the rolls.

Tips for Making Shrimp Egg Rolls

Here are my top tips for making shrimp egg rolls. They will turn out absolutely perfect every time you make them!

  • To Air Fry the Egg Rolls: Once all the egg rolls are filled, lightly spray or brush them with oil and place them in an even layer in the air fryer with space between. Set the air fryer to 375 degrees and fry them for 4-5 minutes on each side or until they are golden brown. 
  • Shrimp Size: I like to use shrimp that isn’t too big so I can get at least 3 pieces in each roll, using jumbo shrimp works if that is your preference, but you might only get 1 or 2 shrimps in each roll. 
  • Use Cooked Shrimp: You can use cooked shrimp in this recipe, just toss it in with the veggies and sauce at the end of cooking to coat it in flavor, don’t overcook the shrimp.

How to Store Leftovers

  • In the Refrigerator: Store leftovers in an airtight container in the fridge for up to 4 days. 
  • In the Freezer: Place cooled egg rolls into an airtight container and store them in the freezer for up to 2 months.
  • To Reheat: To make sure your leftovers are nice and crispy, cook them in the air fryer at 375 degrees Fahrenheit for approximately five minutes.

Smashed Brussels sprouts are a spin-off the very popular and very delicious smashed potatoes recipe. They’re just as easy to make and are the perfect side dish or appetizer. I might even like these more than smashed potatoes because they are addictively crispy and caramelized around the edges. So addictive, in fact, I sometimes can’t stop myself from eating them straight off the pan!

Crispy Brussels Sprouts Ingredients

You won’t believe that just four simple ingredients can bring so much flavor! The whole smashing method takes this green vegetable to the next level. The exact measurements of the ingredients are in the recipe card at the bottom of the page.

  • Brussels Sprouts: This recipe uses about one pound of cleaned and trimmed whole Brussels sprouts.
  • Olive Oil: This recipe uses a generous amount of olive oil to cook the Brussels. This will help them to become crispy and keep them from burning.
  • Salt and Black Pepper: All you need is a simple seasoning of flakey salt and black pepper.

How to Make Smashed Brussels Sprouts

These smashed Brussels sprouts are a unique side dish that everyone will love! They’re so good that your family will be swiping them from the sheet pan before you can get them to the table!

  1. Boil: Preheat the oven to 425 degrees Fahrenheit and bring a large pot of salted water to a rolling boil over high heat. Par-cook the Brussels sprouts by adding them to the water and boil for 15-18 minutes. Strain the Brussels sprouts from the water and drain them in the colander for 5-10 minutes.
  2. Season: Spread the Brussels sprouts out in a single layer on a large baking sheet, then drizzle with olive oil. Sprinkle with a couple of generous pinches of flakey salt and freshly ground black pepper. Toss until all the Brussels sprouts are evenly coated.
  3. Smash and Roast: Use a flat-bottomed glass or measuring cup to smash each tender Brussels sprout flat against the baking sheet. Bake the Brussels sprouts for 10-15 minutes. Once the underside is crispy, flip them all over and roast for another 10-15 minutes until both sides are crisp.

Tips and Variations for the Best Brussels Sprouts

This Brussels sprouts recipe could not be any easier! However, here are a few tips and variations so your family will go crazy over these every time you make them.

  • Brussels Sprouts Size: If your Brussels sprouts are extra large, you can cut them in half instead of roasting them whole. Smash them with the cut side down on the baking sheet. 
  • Drying the Sprouts: It can help to pat each Brussels sprout dry with a clean kitchen towel or paper towel. The more water that is left on them, the longer they will have to roast before they become crispy. Patting them dry helps remove the extra moisture before roasting.
  • Add Seasonings: I like these with just salt, pepper, and olive oil, but you can add a little more flavor by adding ¼ teaspoon of garlic powder, Italian seasoning, or crushed red pepper to the Brussels sprouts before you toss them. You could even add a squeeze of fresh lemon juice over the top when they come out of the oven. 
  • Make Them Cheesy: For a little extra flare, add ¼-⅓ cups of finely grated parmesan cheese to the tops of the Brussels sprouts about 5 minutes before they are done cooking. 
  • Best Freshly Cooked: Avoid cooking these too far ahead of when you plan to serve them. The longer they sit, the more crispiness they will lose! They are best fresh out of the oven.

Storing Leftover Smashed Brussels Sprouts

  • Make-Ahead Option: You can par-cook the Brussels sprouts in advance to save on prep time. Once they finish boiling, transfer them to a bowl of ice water to stop the cooking. Store them in an airtight container lined with 2-3 paper towels to absorb the excess water. When you are ready to finish them, continue as directed in the recipe card. 
  • In the Refrigerator: Cooked smashed Brussels sprouts can be stored in an airtight container for up to 4 days.
  • To Reheat: You can reheat them in a 350-degree Fahrenheit oven for 5 minutes or in an air fryer at 350 degrees Fahrenheit for 2-3 minutes.

Let’s Make Creamy Tuscan Dip

This easy creamy Tuscan dip comes together in minutes! Mix the ingredients all in the same bowl, then spread it into a baking dish or oven-safe skillet to bake! Follow my step-by-step instructions below.

  1. Preheat Oven/ Mix Cream Cheese and Sour Cream: Preheat the oven to 375 degrees Fahrenheit. Spray a 1-quart baking dish or oven-safe skillet with non-stick cooking spray then set aside. Cream together the cream cheese and sour cream.
  2. Add Seasonings and Cheeses: Add the garlic, garlic powder, salt, mozzarella cheese, parmesan cheese, and Italian seasoning.
  3. Fold in Spinach and Sun-Dried Tomatoes: Fold in the sun-dried tomatoes and spinach until combined.
  4. Bake and Serve: Spread the mixture evenly into the prepared baking dish. Bake for 15-20 minutes or until it is heated throughout and bubbly. Serve warm with sliced bread, a baguette, or crackers.

Variations

There’s a reason why this dip is also known as “Marry Me Dip!” Everyone will love you for making it and they’ll ask you for the recipe! Here are some variations to making this dip just the way you like it!

  • Add-Ins: Add 1/4 cup of crumbled bacon, marinated artichoke hearts, chopped mushrooms, or sliced black olives. These all would be delicious additions to the creamy Tuscan dip and add a yummy texture.

  • In the Refrigerator: After baking creamy Tuscan dip, allow it to cool completely. Cover tightly with plastic wrap, or store it in an airtight container in the refrigerator. It will last for about 2-3 days.
  • To Reheat: There are a few ways to reheat leftovers. The easiest option is to reheat it in the microwave or on the stovetop until warmed through. This Texas Twinkies recipe is made with easy-to-find ingredients. However, it does require pre-cooked brisket. You can buy smoked brisket from your favorite barbecue joint or make my tried and true slow cooker beef brisket.

  • Jalapeño peppers: Choose fresh, bright green jalapeños that are big enough to hold all of the stuffing.
  • Cream Cheese: Adds creaminess and balances the heat from the peppers. Be sure to soften your cream cheese so it’s easy to mix with the other filling ingredients.
  • Smoked Brisket: Gives the best savory, smoky, and meaty flavor.
  • Cheese: For extra cheesiness! We really like shredded pepper jack cheese, but other cheeses will work.
  • Seasonings: Mix in garlic powder and onion powder to bring just a hint of garlic and onion flavor.
  • Bacon: Bacon makes everything better! Regular bacon will crisp up best.
  • BBQ Sauce: Use my homemade BBQ sauce recipe or your favorite store-bought variety.

How to Make Texas Twinkies

Follow these few simple steps, then you’ll have a tasty appetizer your family and friends will love!

  1. Prep: Preheat the oven to 350 degrees Fahrenheit and line a large baking sheet with parchment paper or foil. 
  2. Slice the Jalapeños: Prepare the jalapeños by cutting a slit down the length of one side and then another cut across the top, stopping before cutting all the way through. The two cuts should form a T on the jalapeño. Keep the stem, but remove the seeds and veins. Repeat with the remaining jalapenos.
  3. Make the Filling: Combine the cream cheese, brisket, pepper jack, and seasonings in a large bowl. Spoon the brisket mixture into the jalapeños until they are filled but are still able to close all the way. 
  4. Wrap With Bacon: Wrap each jalapeño tightly with a slice of bacon. You can use toothpicks to hold the bacon on the peppers, but they are not necessary. 
  5. Bake: Line the jalapeños up on the prepared baking sheet and bake for 25-30 minutes, until the bacon is getting crispy and the jalapeños are tender. Brush each one generously with BBQ sauce and bake for an additional 5 minutes, 
  6. Cool and enjoy: Let them cool slightly before serving.

Hot Tip: Wear Gloves!

***I recommend using disposable gloves when cutting and deseeding jalapenos so you don’t get the spicy oils from jalapeños on your skin, eyes, or face. These oils can linger on your hands even after washing, so gloves will help prevent that.

Texas Twinkie Tips and Variations

Texas Twinkies are easy to make and customizable! Below are a few tips and simple variation ideas to spice things up.

  • Use Different Cheese: I used pepper jack cheese in my Texas Twinkies, but other delicious choices would be sharp cheddar cheese, smoked gouda, or Monterey jack. You can do a combination of any hard cheese that you love.
  • Using Thick-Cut Bacon: It may take a little bit longer to render the fat as much as you prefer, so add a few minutes at a time to the baking time and keep an eye on the doneness.
  • Don’t Overstuff With Filling: Be careful not to overstuff these bad boys! If you add too much filling, it can leak out onto the baking sheet. Fill them just enough that the cavity inside the jalapeno is full, and the sides can touch when you close them. But fear not—even if they leak, they are still delicious!
  • Using a Toothpick: You can use a toothpick at the top and bottom of each jalapeño to anchor the bacon to it. You don’t have to do this, but the bacon will sometimes curl and unwrap itself from the ends as it bakes.
  • Size of Jalapeños: Jalapeños vary in size, and larger ones may need 1 ½ to 2 slices of bacon to be fully wrapped. If you need to use more than one slice, secure the bacon with a wooden toothpick. The bacon will fuse as it bakes, allowing you to remove the toothpick before serving.
  • Smoking: Can you smoke Texas Twinkies? Yes!! Smoke these in your smoker at 375 degrees Fahrenheit for about 40-45 minutes.

Storing Leftovers Jalapeño Poppers

While bacon-wrapped jalapeños are best enjoyed straight out of the oven, here’s how to store any leftovers you might have:

  • In the Refrigerator: Place any leftover peppers in an airtight container and refrigerate them for up to 2 days. The bacon may lose some of its crispiness, but the overall flavor will still be enjoyable.
  • To Reheat: To reheat, place on a baking sheet and bake at 350 degrees Fahrenheit for 10-15 minutes or until the bacon is nice and crispy again. You can also reheat these in an air fryer.

This is one of those new recipes that couldn’t be easier! Just start by baking the tater tots, then cook the meat, assemble all the ingredients, and let everything cook together. The result? Out-of-this-world delicious!

  1. Prep: Preheat the oven to 425 degrees Fahrenheit, then line a sheet pan with parchment paper and Spread the frozen tater tots in a single layer in the pan.
  2. Bake: Place the tater tots in the oven for 10 minutes. Remove, toss them, and then continue baking for another 10 minutes until golden brown.
  3. Brown the Beef: While the tater tots are in the oven, heat a skillet over medium-high heat and add the ground beef. Cook the beef until it is evenly browned.
  4. Season Meat: Drain the excess grease from the ground beef, add taco seasoning, and stir to combine.
  5. Assemble Nachos: Once the tater tots are out of the oven, set the oven to broil. Top the tater tots with cooked beef, scoops of refried beans, corn, black beans, salsa, cheddar, and Monterey Jack cheese.
  6. Broil: Put the topped tots back in the oven and broil for about 5 minutes until the cheese is melted and bubbly.
  7. Add Toppings: Take the tater tot nachos out of the oven and top with desired toppings!

Nachos are one of my favorite snacks! I love having leftovers. Here is how to keep and reheat them!

  • Refrigerate: Store leftovers in the fridge for up to 3 days. 
  • Reheat: To reheat the nachos, Preheat the oven to 350 degrees Fahrenheit, arrange the nachos on a baking sheet, and reheat for 5-10 minutes until crispy. Once they are done cooking, add fresh toppings (optional).
  • Air Fryer: You can also reheat them in an air fryer. Heat the air fryer to 360 degrees Fahrenheit, place totchos in the bottom of the basket, and set the timer for 5 minutes.

However, this cowboy version is taken to the next level with the addition of beer, beans and corn! It’s quick and easy to whip up and makes a great appetizer for any occasion from parties to lazy weekends!

Ingredients in Cowboy Queso

Velveeta cheese is a must in this dip because it’s incredibly melty and has the creamiest texture for dipping. Combine that with the sausage and all of the other flavorful ingredients, and you’ll have an amazing appetizer for game day, parties, or family get-togethers. Check out the recipe card at the bottom of the post for exact measurements.

  • Mild Sausage: 1 pound cooked and crumbled.
  • Chili Powder: For a subtle kick of heat.
  • Onion powder: Gives this dip the perfect onion flavor.
  • Pale Ale Beer: Adds robust deep flavor.

This cowboy queso recipe requires little effort and has the best cheesy consistency and mouth-watering flavor! You won’t want to stop dipping!

  1. Cook the Sausage: In a large cast iron skillet, add the sausage. Cook and crumble over medium-high heat until no longer pink. Drain any grease once cooked through.
  2. Add Seasonings and Beer: Stir in the chili powder, onion powder, and beer. Allow the beer to cook and reduce for about 4-5 minutes.
  3. Add Cheese: Add the Velveeta and Monterey Jack cheeses. Reduce the heat to medium and melt the cheese, stirring occasionally.
  4. Add the Beans, Corn, and Rotel: Once the cheese is melted, stir in the beans, corn, and Rotel tomatoes and heat through for about 5 minutes. 
  5. Garnish and Serve: Garnish with chopped cilantro, diced tomatoes, and jalapeños. Serve warm with chips!

Cowboy Queso in the Crockpot

Cook and brown the sausage over the stove then drain any excess grease. Add all of the remaining ingredients to the crock pot. Cook on high for 2 hours or on low for 4 hours.

Here are some suggestions for ways that you can customize this dip to make it your own and ideas for fun serving options!

  • Swap the Meat: The sausage adds great flavor, but ground beef, chicken, or pork all work! Season with taco seasoning and cook before adding. Cooked chicken breast or carne asada would also be super tasty.
  • Add More Spice: Add spicy Rotel, hot sausage, sautéed diced jalapeños, a pinch of cayenne pepper or a dash of your favorite hot sauce for an extra fiery kick.
  • Serve With: Cowboy queso dip is delicious served with a variety of dippers like tortilla chips, pretzel bites, toasted bread, or even vegetables like celery and bell peppers.

Cowboy Queso

Ingredients

  • 1 pound mild sausage
  • 1 teaspoon chili powder
  • 1 teaspoon onion powder
  • 1 cup pale ale beer
  • 10 ounces Rotel tomatoes with green chilies, drained
  • 16 ounces Velveeta cheese
  • 2 cups Monterey jack cheese shredded
  • 1 can black beans, drained and rinsed
  • 1 cup corn, canned or frozen
  • cilantro, tomatoes, and jalapenos, for serving
  • tortilla chips, for serving

Instructions

  • In a large cast iron skillet, add the sausage. Cook and crumble over medium-high heat until no longer pink. Drain any grease once cooked through.
  • Stir in the chili powder, onion powder, and beer. Allow the beer to cook and reduce for about 4-5 minutes.
  • Add in the Velveeta cheese and Monterey Jack cheese. Reduce the heat to medium and melt the cheese, stirring occasionally.
  • Once the cheese is melted, stir in the beans, corn, and Rotel tomatoes and heat through for about 5 minutes.
  • Garnish with chopped cilantro, diced tomatoes, and jalapeños.
  • Serve warm with chips!
