Additionally, any store-bought Italian dressing works to dress this salad, however I love using my copycat Olive Garden Salad Dressing or Easy Italian Dressing. It adds authenticity, but my guests always know the salad was made with love!

  • Al Dente: Cook your noodles just until they are al dente! If you overcook your pasta, it will get mushy and break apart when you stir all the ingredients together.
  • Absorption: Pasta salad tends to absorb liquid as it sits, so keep that in mind if you are making the pasta salad in advance. If I prepare the pasta salad the night before, I like to reserve about ¼ of the bottle of dressing to toss with the pasta salad right before I serve it. 
  • Customizable: You can easily customize the ingredients by adding alternative veggies or cheeses or omitting the ones you do not like.

This grilled chicken Caesar salad is my favorite refreshing meal when the weather starts to warm up! I’ve always been a huge fan of a good classic Caesar salad, but this one with juicy, flavor-packed grilled chicken and juicy tomatoes is on a whole new level.

It’s actually pretty easy to make, too! Let the chicken marinate in Caesar dressing to add plenty of that delicious Caesar flavor. Then, once the chicken is grilled, everything comes together in minutes. Serve it alone or with some crusty buttered sourdough bread on the side.

Ingredients in Chicken Caesar Salad

This grilled chicken salad recipe is the absolute best! The ingredients are simple and come together with very little effort. Check out the recipe card at the bottom of the post for exact measurements.

Chicken

  • Caesar Dressing: You can use store-bought dressing, but we highly recommend this homemade Caesar Dressing. It’s perfectly creamy with incredible flavor!
  • Olive Oil: Smooths out the marinade and adds some necessary fat for juicy grilled chicken.
  • Lemon Juice: All good marinades have just enough acidity to tenderize the meat.
  • Salt & Pepper: Brings out all of the delicious flavor.
  • Chicken Breasts: These will marinate in the dressing for at least 1 hour making them tender, juicy and full of flavor.

Salad

  • Romaine: Chopped romaine adds bright green color and makes the salad fresh and crisp.
  • Cherry Tomatoes: For juicy bursts of sweetness.
  • Croutons: I love using my homemade croutons to add plenty of crunchy texture.
  • Parmesan Cheese: Add shredded or shaved parmesan cheese for a bit of nutty sharpness that enhances the flavor of the dressing.
  • Caesar Dressing: You can’t have a Caesar salad without Caesar Dressing! It adds the most wonderful briny, tangy and rich taste.
  • Black Pepper: Freshly cracked black pepper is the perfect finishing touch!

How to Make a Grilled Chicken Caesar Salad

Just five simple steps and you’re well on your way to the best salad of your life! This is one of those salads that even the kids will love. It’s that good! Here’s the easy process of how everything comes together:

For the chicken

  1. Make the Marinade: In a large sealable bag or container, mix together the Caesar dressing, olive oil, lemon juice, and salt and pepper.
  2. Marinate the Chicken: Add the chicken breasts to the bag or container and coat each breast evenly. Place the chicken in the fridge to marinate for at least 1 hour.
  3. Grill: Heat a grill up to 375 degrees Fahrenheit. Once the chicken is ready, remove it from the marinade and grill for about 6-8 minutes on each side. Discard the marinade.

For the salad.

  1. Slice Chicken: Once the chicken is grilled, let it rest at least 5 minutes before slicing into ½ inch strips.
  2. Assemble and Toss Salad: To a large bowl add the chopped romaine, cherry tomatoes, croutons, parmesan cheese, sliced chicken and caesar dressing, top with freshly cracked black pepper and toss.

Tips and Variations

With a joining of fresh ingredients and a flavorful, creamy salad dressing, this is definitely my new favorite salad recipe! Here are some helpful tips and ways to make it your own!

  • Using Homemade Dressing: I like to use my homemade dressing, but a store-bought dressing works just as well! The same goes for the croutons
  • Marinating the Chicken: Your chicken can marinate for up to 4 hours, but 1 hour is sufficient. If you’re in a hurry, even 30 minutes will be okay, but not quite as good.
  • Salad Greens: Romaine is classic in Caesar salads; however, any favorite greens will work. You can even use a combination of several varieties.
  • Precooked Chicken: You can totally use pre-cooked chicken or rotisserie chicken for this recipe, but what makes it special is the marinated grilled chicken.

Make Ahead & Storing Leftovers

  • Make Ahead: Get a head start by making the dressing and grilling the chicken a day or two ahead, and store each separately in airtight containers in the refrigerator. You can also chop the lettuce and tomatoes beforehand. Then, when it comes time to serve, pull everything out of the fridge, assemble, and enjoy!
  • Leftovers: Once the salad is tossed, it’s best enjoyed the day it’s made, but you can keep leftovers in an airtight container in the fridge for up to 3 days. It’s best to store the dressing separately from the salad.

  1. Make the Dressing: In a bowl, whisk together the peanut butter, soy sauce, lime juice, sesame oil, sweet chili sauce, fish sauce, brown sugar, ginger, and garlic. Then cover and set aside.
  2. Prep: Prepare all the ingredients; shred the cabbage, chop the chicken, shred the carrot, chop and slice the cilantro, cashews, and green onions.

  • Chicken Options: You can buy store-bought cooked chicken or use this Chili Lime Chicken recipe.
  • Shredding Cabbage: When I shred the cabbage, I like to use a potato peeler, it gets a perfect consistent shred. If you want larger shreds then you can do it by hand.
  • Dressing Consistency: You can add water to the sauce to thin it a bit depending on the consistency you want. Just start with a couple teaspoons at a time.
  • Alternative to peanut butter: If you’re worried about peanut allergies then feel free to use any of your favorite nut butters in place of the peanut butter.
  • Vegetarian: Make this Thai chicken salad vegetarian by omitting the chicken or using air fryer tofu instead.

Storing Leftovers

How to Keep Cucumber Salad from Getting Watery

To keep cucumber salad from getting watery, start by sprinkling salt on the sliced cucumbers and letting them sit for about 10-15 minutes. Then, rinse them under cold water and pat them dry with paper towels. This removes extra moisture.

Which Cucumbers to Use in Creamy Cucumber Salad?

  • English cucumbers: These are preferred because the seeds are smaller. The large seeds in a slicing cucumber cause them to be more bitter. Also, the skin on English cucumbers are thinner, eliminating the need to peel the cucumber.
  • Regular slicing cucumbers: If you do, I recommend using smaller cucumbers or fresh home grown (or from the farmers market) so that you are using ones that aren’t bitter. If the skin is thick on the cucumbers you can go ahead and peel them.

How to Store Leftovers

It only takes 20 minutes to prepare, and it’s also really tasty chilled, making it perfect to prep ahead of time! It’s my go-to for bringing to any potluck or get-together!

Trust me when I say that you’ve got to make this recipe! It’s a crowd-pleaser that will make everyone ask for a second helping. It’s also versatile enough to pair with so many main dishes! Try it as a side dish paired with honey-glazed hamair fried chicken or even salmon.

What’s in a Carrot Salad?

This carrot salad recipe comes together with wholesome, fresh ingredients that taste great! The dressing is the perfect finishing touch to really make this dish shine! Check out the recipe card at the bottom of the post for exact measurements.

  • Carrots: Look for carrots that are firm and free of cracks or splits. Use multicolored or tricolored for a gorgeous presentation!
  • Walnuts: Adds a nutty crunch!
  • Craisins: The sweet, chewy dried fruit is a great complement to the earthy, crisp carrots.

Dressing

  • Lemon Juice: Zesty and fresh, lemon juice adds the right amount of citrus to this salad.

Julienning the carrots is the most time-consuming part of throwing this together. It’s really quite simple, though, and so worth it.

  1. Prep: Prepare the carrots by washing and julienning them (thin matchstick cut). Toss the carrots into a bowl with the walnuts and craisins.
  2. Make the Dressing: In a small bowl, whisk together the lemon juice, apple cider vinegar, olive oil, mustard, thyme, salt and pepper.
  3. Toss and Serve: Pour the dressing over the carrot mixture and toss to coat. Serve immediately, or cover and place in the fridge for a few hours to allow the flavors to develop and soak into the carrots.

Tips and Variations

This carrot salad is amazing as-is, but it’s super versatile, so you can easily change it up. Here are some tips and ideas on how you can make it your own!

  • Change Up the Ingredients: You can substitute the craisins for raisins or dried cranberries or leave them out altogether. Similarly with the walnuts, you can substitute them for pecans, pistachios, or sunflower seeds.
  • Herbs: You can use fresh or dried thyme in this recipe. If using dried thyme, you’ll need about 1/4 tsp. Also, feel free to use another favorite herb like oregano.
  • Type of Carrots: Plain orange carrots work perfectly fine for this recipe, I like the tricolor option purely for presentation.
  • Toast the nuts: We love toasting the walnuts to really bring out the nutty flavor. Add them to a small dry skillet over low heat and cook, stirring occasionally, until they’re fragrant, about 1 minute.

Recipe Tip

We highly recommend julienning your own carrots. Do not use a bag of pre-cut carrots from the store. You want this salad filled with sweet, crunchy carrots, and bagged ones are often dry and flavorless.

You can julienne the carrots with a julienne peeler or a knife. Julienne peelers are cheap and efficient, you can prep a whole bunch of carrots in just minutes! If using a knife, cut peeled carrots into chunks and cut lengthwise into thin matchsticks. 

Make Ahead & Storing Leftovers

One of the best things about this salad is how easy it is to make ahead and it keeps for so long in the refrigerator. This makes for a great meal prep option! 

  • Make Ahead: Carrot salad is great to make the night before you plan to serve it. All of the flavors intensify and become even more delicious!

Ingredients

  • 1 pound carrots, tri color for presentation
  • cup walnuts, chopped
  • ½ cup craisins

Dressing

Instructions

  • Prepare the carrots by washing and julienning them (thin matchstick cut). Toss the carrots into a bowl with the walnuts and craisins.
  • In a small bowl, whisk together the lemon juice, apple cider vinegar, olive oil, mustard, thyme, salt and pepper.
  • Pour the dressing over the carrot mixture and toss to coat. Serve immediately, or cover and place in the fridge for a few hours to allow the flavors to develop and soak into the carrots.

Notes

Store leftovers in the fridge in an airtight container for up to 5 days.
You can substitute the craisins for raisins or leave them out altogether. Similarly with the walnuts, you can substitute them for pecans, pistachios, or sunflower seeds.
This recipe does great being prepared the night before and served the next day!
You can use fresh or dried thyme in this recipe
Plain orange carrots work perfectly fine for this recipe, I like the tri color option purely for presentation.

Santa Fe Salad is filled with bold southwestern flavor and has the most wonderful texture. Romaine lettuce, grilled chicken, black beans, corn, tomatoes, tortilla strips, avocado and cheese come together for the most amazing combination. And the creamy southwest dressing is the perfect finishing touch.

Santa Fe Salad Recipe

This Santa Fe salad recipe is zesty, fresh and full of southwest flavors you are going to love. It comes together quickly with very little effort in just 20 minutes, making it a go-to when I’m short on time but need big flavor. The ingredients are full of nutrients with plenty of protein and healthy fats that allows this salad to be a satisfying main dish. However, it’s also crowd-pleasing enough to bring to potlucks and other gatherings where there’s a spread of different dishes. 

The lettuce, tomatoes and all of the veggies keep this salad light, yet filling. The taco seasoned chicken, black beans and corn give it a Mexican flair. And the black olives and avocado add flavor and texture. Add tortilla strips for a contrasting crunch and saltiness. Finally, top with the insanely delicious dressing that you’ll want to put on everything!

Ingredients Needed

The ingredients for this Santa Fe salad recipe are fresh and delicious! Check out the recipe card at the bottom of the post for exact measurements of the ingredients.

  • Romaine Lettuce: For the perfect satisfying crisp freshness!
  • Grilled Chicken Breast: Use leftover chicken or make this grilled chicken recipe.
  • Taco Seasoning: For coating the chicken. Use store-bought, or for maximum flavor, try my homemade taco seasoning.
  • Yellow Bell Pepper: Adds texture and a pop of color! Orange or red bell peppers work great too!
  • Cherry Tomatoes: For juicy bursts of sweetness.
  • Black Beans: Rinse and drain for added fiber, flavor and texture.
  • Corn: Canned corn is convenient and will add just a hint of sweetness in every bite.
  • Avocado: Halved, seeded, peeled, and diced for wonderful creaminess.
  • Black Olives: Buy canned sliced olives or slice them yourself.
  • Queso Fresco: Love this Mexican-style crumbled cheese!
  • Cilantro: Adds freshness! If you don’t like cilantro, simply omit it.
  • Salt and Pepper: To bring out all of the delicious flavors!

Dressing

  • Sour Cream: Adds a lovely tangy flavor to the dressing.
  • Mayonnaise: Balances out the tang of the sour cream while adding creaminess.
  • Milk: Gives the dressing the perfect consistency.
  • Cilantro: For fresh herby flavor. Use parsley if you don’t like cilantro.
  • Lime Juice: A little acid is necessary in dressings and the taste of the lime complements the ingredients in the salad.
  • Southwest Seasoning: You can buy this or make your own!
  • Salt and Pepper: To taste!

Let’s Make Santa Fe Salad!

This Santa Fe salad comes together with very little effort and has the best pairing of flavors! You’re going to love it!

  1. Prep: Wash and chop the lettuce and place it in a large bowl. Add the chicken breast to a separate bowl with the taco seasoning and toss to coat the chicken evenly. Add the seasoned chicken to the bowl of lettuce.
  2. Combine All Ingredients: Add in the bell pepper, tomatoes, black beans, corn, avocado, olives, queso fresco, and cilantro. Season the salad with salt and pepper.
  3. Make the Dressing: In a medium bowl, whisk together the sour cream, mayonnaise, milk, cilantro, lime juice, southwest seasoning, and salt and pepper.
  4. Toss and Serve: Pour the dressing over the salad and toss to evenly mix all the ingredients before serving. Enjoy fresh!

Tips and Variations

A joining of all of my favorite Tex-Mex ingredients and a flavorful creamy salad dressing, this might just be my new favorite salad recipe! Here are some helpful tips and ways to make it your own!

  • Choosing an Avocado: Look for firm, dark green avocados that give slightly to pressure. They should be free from dents and bruises.
  • Lettuce: I like to use romaine lettuce because it has both crunchy and leafy parts that give the salad delicious texture. You can use iceberg or a mixture of both. Also, try mixing in some spinach for an extra boost of iron.
  • Meat: Try different protein options in this salad like grilled shrimp, steak or even crispy chicken.
  • Cheese: If you don’t have queso fresco, feta cheese is a good substitute. You could also sprinkle in some shredded cheddar cheese. 
  • Dressing: This salad pairs perfectly with the southwest dressing, but you could also serve it with Blue Cheese Dressing or Homemade Ranch Dressing.

Storing Leftovers

Like most salad recipes, this Santa Fe salad is best served fresh and just after making it!

Once the salad and dressing have combined, it will not keep for long. The salad will get soggy. Only dress what you plan on eating and store the salad and dressing separately for longer storage. Both will keep in the fridge for 3 days.

The avocado will also brown quickly, so if you think you might have leftover salad, only add the avocado to what will be enjoyed immediately.

We love teriyaki chicken at my house. (Don’t we all?) It’s a dinner staple! But for those times when I’m craving something a little more wholesome, pasta salad is my go-to. This teriyaki spinach pasta salad is the best of both worlds. Here’s why:

The pasta keeps things nice and hearty but I LOVE the added leafy greens. Then you’ve got those tender pieces of chicken and crunchy cashew bits all smothered in a homemade teriyaki dressing. The perfect pasta salad for this spring, summer, and beyond.

Ingredients You’ll Need

All the ingredients to create a pasta salad that checks all of the boxes: bright and fresh but hearty and satisfying! (Exact measurements are in the recipe card below!)

For the Pasta Salad:

  • Bowtie Pasta: Grabs onto the yummy teriyaki dressing for flavor in each bite.
  • Baby Spinach Leaves: For flavor and texture. You can also use kale instead if you prefer.
  • Boneless Chicken: I used cooked, chopped chicken but shredded chicken will also work. Whatever you prefer!
  • Craisins: So your teriyaki pasta salad has a sweet and tart contrast to the savory flavors.
  • Honey Roasted Cashews: For the perfect crunch and nutty flavor. You could also use peanuts interchangeably.
  • Mandarin Oranges: You can’t go wrong with a little pop of citrus-y flavor!
  • Garnishes: Chopped cilantro for some herby, peppery flavor, green onions for more savory flavor, and sesame seeds for that perfect texture!

For the Teriyaki Dressing:

  • Vegetable Oil: The base of the teriyaki dressing.
  • Teriyaki Sauce: Use your favorite brand! Yoshida’s is my personal favorite.
  • Rice Vinegar: So the dressing is sweet and tangy.
  • Granulated Sugar: Balances out all the savory flavors.
  • Garlic (Minced): For savory, delicious flavor.
  • Salt and Black Pepper: Basic seasonings to bring out all the flavors in the dressing.

Teriyaki Chicken and Spinach Pasta Salad Recipe

Not only does this teriyaki spinach pasta salad look and taste good, but it’s super easy to mix up. Perfect for making last minute before any potluck or get-together.

Make the Dressing

  1. Combine Ingredients: To a medium bowl, add the oil, teriyaki sauce, rice vinegar, sugar, garlic, salt and pepper.
  2. Whisk Together: Whisk to combine and then set aside.

Pasta Salad

  1. Cook Pasta: Cook the pasta to al dente according to package instructions. Drain the pasta in a strainer then run it under cold water to cool the pasta.
  2. Combine Salad Ingredients: Then to a large bowl, add the pasta, spinach, chicken, craisins, cashews, mandarin oranges, cilantro, green onion, and sesame seeds.
  3. Add Dressing: Pour the dressing over the salad ingredients and then toss to coat evenly.

What I love most about this teriyaki spinach pasta salad is how unique it is! The flavors are so delicious and you’ll want to bring it to every gathering. Here are some tips and ideas to make it your own.

  • Make Ahead: This teriyaki spinach pasta salad can be prepared in advance! Prep all the add-ins and store them in containers. Make the dressing and refrigerate, then cook and chop the chicken. Cook the pasta ahead of time, then assemble when you’re ready to serve. You can even assemble it and refrigerate it for up to 2 hours before serving. All of the ingredients hold up well and marinate together!
  • Add Different Fruit: Grapes or pineapple would be delicious in this salad. Experiment and make it your own!
  • Nuts: I love any type of honey-roasted nuts because it adds sweetness, but any type of nuts can be used in this salad. Raw, toasted, caramelized…you decide!
  • Chicken: I LOVE using leftover grilled chicken in the recipe. The grilled flavor pairs well with the teriyaki dressing. Any leftover chicken will work. Use baked, shredded, or even a rotisserie chicken.
  • Marinate the Pasta and Dressing: This pasta salad gets even better as it sits! Toss some of the dressing with the pasta ahead of time and refrigerate it for up to 2 hours. Add the remaining dressing and ingredients then enjoy!
  • Serve as a Meal: This makes the perfect light dinner! It has chicken, pasta, veggies, and fruit! All-in-one salad. Serve with a side of crusty bread and dinner is done!
