Ingredients to Make Mozzarella Stuffed Meatballs

The meatball base uses staple ingredients, just make sure to have your cheese on hand because it’s the BEST part of this recipe! Follow the recipe card below for exact measurements.

  • Ground Beef: I prefer lean ground beef for this recipe!
  • Italian Breadcrumbs: Give the texture and structure of the meatballs.
  • Parmesan Cheese: Adds a delicious cheesy flavor to the meatball mixture!
  • Egg: The egg helps add structure and bind the meatball mixture together.
  • Onion: Finely minced onion for added flavor.
  • Garlic: Fresh garlic always.
  • Oregano and Basil: Add delicious flavor using Italian seasonings.
  • Salt and Pepper: Helps balance and enhance the flavors.
  • Mozzarella Cheese: Cubed fresh mozzarella gives the best melty results but I list other options below!
  • Homemade Marinara: Use jarred marinara or try my homemade recipe because it is fantastic!
  • Spaghetti Noodles: For serving, but use any kind of noodles you like!

How to Make Mozzarella Stuffed Meatballs

Homemade meatballs are so easy and fun to make! Who wouldn’t love melty cheese oozing out of their meatballs? The best part is that you pop them in the oven and then warm them in your favorite sauce. Easy peasy and the whole family will want these meatballs on the weekly dinner rotation!

  1. Preheat oven to 375 degrees Fahrenheit and line a baking sheet with parchment paper. In a large bowl, add the ground beef, bread crumbs, parmesan cheese, onion, garlic, egg, oregano, basil, salt, and pepper.
  2. Mix until everything is just combined.
  3. Take about 1 ½ tablespoons of meatball mixture in your hand and start forming it into a ball. Take one piece of the diced mozzarella, pop it into the center of the meatball, and continue to form a ball around the cheese. The meatballs should be 1 inch in diameter.
  4. Place the finished meatballs onto the prepared baking sheet pan. Once the meatballs are all formed, place them in the oven and bake for 15-20 minutes, flipping halfway through.
  5. While the meatballs are baking, cook the noodles according to the package directions. Remove the cooked meatballs from the oven.
  6. In a large saucepan or pot, add the meatballs and marinara sauce. Cook over medium-high heat until the sauce is heated evenly and the meatballs are all coated in sauce. Remove the meatballs and sauce from the heat and serve with the cooked pasta.

Tips and Variations

Follow my tips for these tasty mozzarella stuffed meatballs! I also have some fun variations below you’ll love!

  • Stuffing Tips: The meatballs should be about 1 to 1 ½ inches in diameter. No mozzarella should be peaking through the meat once the meatball is finished forming because the cheese will ooze out.
  • Cheese: Fresh mozzarella cheese is best and it melts perfectly, but you can switch up the cheese if you prefer. Pepper jack cheese smoked gouda, or even cheddar cheese would work well!
  • Switch up the Sauce: You don’t have to use a marinara sauce to serve these meatballs. Alfredo, pesto, or a carbonara-style sauce would be delicious as well!
  • Make a Meatball Sub: These meatballs are perfect make a great meatball sub! My kids love it when we have leftovers for this very reason because it’s so yummy!

Storing and Reheating

These mozzarella stuffed meatballs stay juicy and moist and are perfect for lunch or dinner throughout the week. Follow my instructions below for storing and also reheating leftovers. 

  • In the Refrigerator: Store in an airtight container then place in the refrigerator. Your meatballs will last for up to 4 days.
  • In the Freezer: Store in a freezer bag or airtight container for 1-2 months. Thaw overnight in the fridge before reheating.
  • To Reheat: Reheat these meatballs in a skillet over medium heat until warmed through. Add more marinara if needed. You can also reheat these meatballs in the microwave until warmed through.

Beef Filling

  • Beef: I like to use lean ground beef or ground turkey for the filling.
  • Onion: Adds flavor and texture.
  • Salt and Pepper: Enhances all of the flavors.
  • Garlic Powder: For a hint of garlic taste.
  • Chili Powder: Adds Mexican flavor without too much heat.
  • Cumin: Adds a touch of earthiness and warmth to the flavor profile.

Let’s Make Cornbread Cowboy Casserole!

With just one bite of this easy casserole recipe, you’ll be hooked! In fact, it’s definitely one of those dinners you’ll find yourself craving on repeat. So, here’s how it all comes together:

Beef Filling

  1. Prep: Preheat the oven to 350 degrees Fahrenheit and spray a 9×13-inch baking dish with nonstick spray.
  2. Brown the Beef: Cook the ground beef in a large skillet over medium-high heat until no longer pink. Add the diced onion and cook until tender. 
  3. Combine: Add the corn, pinto beans, Rotel tomatoes, salt, pepper, chili powder, cumin, and garlic powder to the ground beef mixture. Stir to combine.
  4. Layer in Pan with Cheese: Pour the beef mixture into the prepared pan then top with shredded cheese.

Cornbread

  1. Make the Cornbread Batter: Combine the corn muffin mix, creamed corn, and sour cream in a medium bowl and mix until you have a thick batter. 
  2. Add the Cornbread Topping and Bake: Spoon the mixture evenly over the casserole. Bake for 35-40 minutes or until the cornbread is golden brown.

Baking Tip

If the top of the cornbread is getting too dark then cover the casserole with aluminum foil. This allows the cornbread mixture to continue to cook but prevents the top from browning too fast!

Variations

One of the best things about this cowboy cornbread casserole is that you can switch things up to suit your taste. You can easily change out the ingredients to make this something your family will gladly devour!

  • Ground Beef: I prefer lean ground beef, but ground turkey or chicken works well too.
  • Beans: You can use any beans you prefer. Kidney, pinto, or black beans are great options. Be sure to drain and rinse the beans.
  • Seasonings: Swap out the seasonings for a packet of taco seasoning.
  • Corn:  Frozen or fresh corn can be used with great results.
  • Rotel Tomatoes: If you don’t have Rotel, use canned diced tomatoes and a small can of diced green chilies. You can also use one cup of salsa.
  • Add-in Ideas: The filling is so versatile. You can add jalapeños, bell peppers, green onions, olives, or any other add-ins you like.

Storing and Reheating Leftovers

If you have leftover cowboy cornbread casserole, store it for an easy lunch the next day! This tastes even better the next day!

  • In the Refrigerator: Once your pie has cooled, store leftovers in an airtight container in the fridge for up to 4 days.
  • In the Freezer: Baked casseroles freeze well if properly wrapped and stored for up to 3 months. To enjoy them after freezing, let them defrost overnight in the fridge.
  • To Reheat: To reheat your refrigerated casserole, place individual servings in the microwave on high for 1 minute or until heated through. To reheat from frozen, thaw it completely in your refrigerator overnight. Then, microwave individual servings or bake the entire dish at 350 degrees Fahrenheit for about 15 minutes.

Fajitas are one of my all-time favorite dishes! They make getting my veggies so delicious and flavorful. Plus, the best part is the minimal cleanup—just one pan, and you’re done! What more could you ask for?

Ingredients for Steak Fajitas

I love how fresh and colorful these ingredients are! A colorful plate means I’m winning at something in life, right? Not only am I getting veggies, my kids will actually eat them as well! Scroll to the recipe card at the bottom of the page for exact measurements!

  • Flank Steak: This is the main protein and gives the dish a hearty, meaty texture and rich beef flavor.
  • Lime Juice: Adds acidity and helps marinate the meat. It also gives the dish a bright flavor.
  • Olive Oil: Provides a base for the marinade and helps in the caramelization process.
  • Fajita Seasoning: This combination of spices—paprika, garlic powder, chili powder, cumin, onion powder, and dried oregano—gives the dish a burst of flavor. You can make your own by following my fajita seasoning recipe!
  • Yellow Onion: Provides a hearty flavor that compliments the steak.
  • Red, Green, and Yellow Bell Peppers: These vegetables give the dish color, crunch, and delicious flavor.

Sheet Pan Steak Fajitas Recipe

This recipe is very straightforward. Make your sauce, slice the meat, chop your veggies, and bake! Dinner is served!

  1. Preheat: Preheat the oven to 400 degrees Fahrenheit and then line a baking sheet with foil. Prepare the steak by slicing it into ½ inch strips.
  2. Whisk: In a bowl, whisk together two tablespoons of olive oil, 1 ½ tablespoons of fajita seasoning, and lime juice to make a marinade.
  3. Marinate: Add the sliced steak and marinade to a bag and let it rest while you prepare the vegetables.
  4. Slice and Toss: Slice the peppers and onion into ½-inch slices, then toss them in a bowl with the remaining olive oil, fajita seasoning, and salt and pepper.
  5. Spread out on sheet pan: Lay the vegetables out on the foil-lined sheet pan, leaving room for the steak. Then, place the steak on the sheet pan next to the vegetables.
  6. Bake: Bake the fajita mix for 12-15 minutes, but you will need to toss and turn the vegetables and steak halfway through baking.
  7. Prep items for serving: While the fajita mix is baking, toast the flour tortillas and slice the limes and fresh cilantro.
  8. Let rest: When the steak is cooked through, and the vegetables are tender, remove the pan from the oven and allow them to cool for a few minutes. Then, you can serve it with your favorite toppings!

Steak Fajita Tips

This recipe is hard to get wrong. Here are a few tips to make it turn out just the way you like it!

  • Pepper variety: You don’t have to use three different kinds of bell peppers. You can use all of one type if you prefer. 
  • Seasoning: I like to use my homemade fajita seasoning, but store-bought works great as well. 
  • Beef cuts: Skirt steak is a good replacement for the flank steak. Check out my post on different cuts of meat if you want more tips!
  • Topping options: I love topping my fajitas with cheese, sour cream, salsa, and guacamole. I love the way the fajita seasoning flavors mix with them!

How to Store Sheet Pan Steak Fajitas

  • In the Refrigerator: Once the fajitas have cooled completely, separate the steak and veggie mixture from the tortillas and toppings and place them in airtight containers. You can store leftovers in the fridge in airtight containers for up to 4 days.

Grilled Tri-Tip

Tri-tip is a delicious cut of beef! It’s less expensive than other steaks such as the rib-eye, but it’s just as flavorful. It has plenty of great marbling (fat running through the meat), which makes it really juicy and tender as long as you don’t overcook it.

Ingredients Needed

This grilled tri-tip is marinated in a mix of simple yet really flavorful ingredients. In fact, you may already have everything you need in your kitchen right now! To get started, check out the recipe card at the bottom of the post for exact measurements.

  • Tri-Tip Steak: Because a tri-tip steak has more fat, it will be much more flavorful than top sirloin. Two to three pounds of tri-tip will feed approximately 4 people.

Marinade

  • Olive Oil: Adds moisture for maximum juiciness.
  • Fresh Lime Juice: The acidity that will help to tenderize the meat.
  • Soy Sauce: Adds a salty, umami flavor.
  • Brown Sugar: Gives the marinade a hint of sweetness that then balances the more savory ingredients.
  • Worcestershire Sauce: Has a sweet, tangy, and spiced flavor that really adds something special to the marinade.
  • Fresh Garlic: A must in any good marinade!
  • Onion Powder: For savory onion flavor.
  • Italian Seasoning: I love to make my own Italian seasoning, but you can certainly use store-bought.
  • Cracked Black Pepper & Kosher Salt: To bring out and enhance all of the flavors.

How to Make Grilled Tri-Tip Steak

After trying this incredible tri-tip steak, the whole family will be requesting it on repeat. Lucky for you, it takes very little effort to prep! In addition, it only needs 10 minutes on the grill!

  1. Make the Marinade: In a medium bowl, whisk together the marinade ingredients.
  2. Marinate the Steak: First, place 2-3 pounds of tri-tip steak in a gallon-sized sealable plastic bag. Next, pour your marinade into the bag. Then, marinate for one hour or up to 24 hours.
  3. Prep: Preheat the grill to 350 degrees Fahrenheit. Remove the meat from the bag, place it on the hot grill, then discard the bag and any leftover marinade.
  4. Grill the Steak: Sear the meat on both sides over direct heat, about 5 minutes per side. Next, move the meat to the section of your grill with indirect heat. Cover the grill lid and turn the meat as needed to cook through. Cook until the instant-read meat thermometer reads 130 degrees Fahrenheit when inserted in the thickest part for medium rare. Feel free to cook the tri-tip to reach your preferred doneness.
  5. Rest the Meat: Remove the tri-tip from the grill and allow the meat to rest for at least 5-10 minutes before slicing. Slice the meat against the grain and enjoy!

Tips and Variations

Follow these tips and variation ideas, so that your steak turns out absolutely perfect!

  • Change the Juice: Try using lemon juice or orange juice in place of the lime juice!
  • Soy Sauce Substitutions: Low-sodium soy sauce can also be used in place of soy sauce. For a gluten-free option, use tamari!
  • Internal Temperature: Use an instant-read thermometer to know precisely when the steak has reached your desired temperature. When inserted in the thickest part of the meat, the instant-read thermometer should read 130 degrees Fahrenheit for a medium-rare steak. For medium doneness, you’ll want it to be between 140 and 150 degrees Fahrenheit, and for medium well, you want your steak to be 150 to 155 degrees Fahrenheit.
  • Let it Rest: It’s important to let your steak rest for at least 5-10 minutes before slicing into it. This allows time for the juices to redistribute throughout the meat. If you cut into it as soon as it comes off the grill, all of the wonderful flavor will end up on your plate instead of inside the meat.
  • Sauces to Serve With Tri-Tip: Serve with my tasty chimichurri sauce! For a creamy sauce, try my homemade horseradish sauce.

Storing Leftover Tri-Tip

This grilled tri-tip makes fantastic leftovers. You can easily reheat slices for a sandwich or salad the next day.

  • Refrigerate: Once the steak is completely cool, transfer it to an airtight container and store it in the fridge for 3-4 days.
  • Reheat: To warm the leftover steak and keep it from becoming dry, heat it low and slow. Use the oven and warm it up at 200 to 250 degrees F, until heated through.

How to Make Tater Tot Nachos

This is one of those new recipes that couldn’t be easier! Just start by baking the tater tots, then cook the meat, assemble all the ingredients, and let everything cook together. The result? Out-of-this-world delicious!

  1. Prep: Preheat the oven to 425 degrees Fahrenheit, then line a sheet pan with parchment paper and Spread the frozen tater tots in a single layer in the pan.
  2. Bake: Place the tater tots in the oven for 10 minutes. Remove, toss them, and then continue baking for another 10 minutes until golden brown.
  3. Brown the Beef: While the tater tots are in the oven, heat a skillet over medium-high heat and add the ground beef. Cook the beef until it is evenly browned.
  4. Season Meat: Drain the excess grease from the ground beef, add taco seasoning, and stir to combine.
  5. Assemble Nachos: Once the tater tots are out of the oven, set the oven to broil. Top the tater tots with cooked beef, scoops of refried beans, corn, black beans, salsa, cheddar, and Monterey Jack cheese.
  6. Broil: Put the topped tots back in the oven and broil for about 5 minutes until the cheese is melted and bubbly.
  7. Add Toppings: Take the tater tot nachos out of the oven and top with desired toppings!

Tips and Variations

  • Customize: You can customize these nachos any way you like. Use a spicy or mild salsa or add any number of toppings. The important thing is to get the tater tots crispy, then top them and melt the cheese. 
  • Protein options: You can substitute ground beef with pulled pork, shredded chicken, ground turkey, or steak. Alternatively, you can omit the meat altogether for a vegetarian option.
  • Cheese: For best results, shred your cheese fresh from a block. Unlike pre-shredded cheese, which has a coating that prevents it from melting very well. You could also add some nacho cheese sauce or add a kick of heat with pepper jack cheese!
  • Topping options: Other topping ideas include bacon, green onions, black olives, guacamole, jalapenos, as well as red onion and tomato.

Storing Tater Tot Nacho Leftovers

Nachos are one of my favorite snacks! I love having leftovers. Here is how to keep and reheat them!

  • Refrigerate: Store leftovers in the fridge for up to 3 days. 
  • Reheat: To reheat the nachos, Preheat the oven to 350 degrees Fahrenheit, arrange the nachos on a baking sheet, and reheat for 5-10 minutes until crispy. Once they are done cooking, add fresh toppings (optional).
  • Air Fryer: You can also reheat them in an air fryer. Heat the air fryer to 360 degrees Fahrenheit, place totchos in the bottom of the basket, and set the timer for 5 minutes.

Throw together this easy Philly Cheesesteak foil pack recipe, and you’ll have dinner on the table in just over 30 minutes! Here’s how to assemble foil packs for the oven or grill:

  1. Prep: Preheat oven to 400 degrees Fahrenheit or grill to 500-525 degrees Fahrenheit.
  2. Mix Ingredients: In a large bowl, toss together the sliced steak, bell pepper, mushrooms, potatoes, onion, olive oil, Worcestershire sauce, and salt and pepper.
  3. Assemble Foil Packets: Divide the meat and veggies evenly into 6 sheets of foil and fold in the sides and top of the foil until it is sealed and forms a packet.
  4. Cook: Place the foil packets in the oven or grill for 25-30 minutes until the meat is thoroughly cooked and the potatoes are tender. For the grill, flip the foil packs over halfway through cooking.

  • Cheese: The recipe calls for Provolone, but you can use any cheese you prefer. Avoid Cheez Whiz, as it won’t cook well on high heat.
  • Steak: The more tender the cut of meat, the better your end product will be. I use Ribeye, but skirt steak would also work really well. Just avoid really tough cuts of meat, or you will end up with very chewy pieces of meat.
  • Change the Meat: To create a delicious chicken version, substitute the steak with thinly sliced chicken breasts or tenders. However, be aware that cooking time may vary.
  • Make it Spicy: To enhance the flavor, add diced jalapeños or crushed red pepper flakes to the mix for an extra kick of heat.
  • Forming the Packets: When forming the foil packs, I find it helpful to shape the foil in a bowl first. This method makes it easier to form around the filling.

  1. Prep and Combine: Preheat oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper. In a large bowl, add the ground beef, breadcrumbs, egg, green onions, sesame seeds, garlic, ginger, red pepper flakes, soy sauce, salt, and pepper.
  2. Mix: Mix all of the ingredients together until well combined.
  3. Shape and bake: Shape the mixture into about 1-inch balls and place the formed meatballs in an even layer on the baking sheet. Bake the meatballs for 12-15 minutes, flipping halfway through. Cook until the meatballs are golden on the outside and no longer pink on the inside.
  4. Make the sauce: While the meatballs are cooking, whisk together the buffalo sauce, brown sugar, apple cider vinegar, sesame seeds, red pepper flakes, and salt in a medium bowl until smooth.
  5. Heat sauce with meatballs: Once the meatballs have finished cooking, add them and the sauce to a skillet over medium heat. Toss to coat, and let simmer.

Tips for Tender, Perfect Meatballs

  • Don’t overcook! Make sure to keep an eye on the meatballs and take them out just after they are no longer pink. Then they will be juicy and fall apart in your mouth!
  • Mix when cold: When you mix everything together, you want to mix it as cold ingredients. So make sure to take everything out of the fridge just before you start cooking. This helps prevent the fat from melting before you cook the meatballs!
  • Protein variations: If ground beef isn’t your preference, ground chicken, ground turkey, or ground pork are excellent alternatives. Just be attentive while cooking to prevent overcooking.
  • Spice or no spice? These firecracker meatballs are meant to be spicy, but if you aren’t a fan of spice, you can reduce the heat by reducing the amount of red pepper flakes.

How to Store Leftover Meatballs

These firecracker meatballs are best served fresh out of the skillet and piping hot! But you can keep leftovers in the fridge and reheat them later!

  • In the Refrigerator: Once the meatballs have cooled, then, place them in an airtight container. Put it in your fridge for 3-4 days.
  • To Reheat: You can reheat them in the microwave, but I prefer crisping them up in the air fryer. Place the meatballs in a single layer in your air fryer, then heat for 3-4 minutes at 370 degrees Fahrenheit.

Try ground turkey, ground chicken, or ground pork. This dish is my go-to weeknight meal when I don’t know what to cook because it’s so easy and all you need is 30 minutes! You can find the measurements below in the recipe card.

  • Broccoli Florets: You can use fresh or frozen bite-sized broccoli florets in this recipe.
  • Lean Ground Beef: I prefer to use lean ground beef, but other varieties of ground meat will work.
  • Yellow Onion: Diced onion adds great savory flavor and texture.
  • Salt & Pepper: To taste!
  • Garlic: Cooked with the onion and ground beef to add savory flavor.

This easy ground beef and broccoli is so quick and easy to make! 30-minute meals that the whole family loves are the best. Here is my full list of 30-minute meals for more dinner inspiration!

  1. Steam the Broccoli: In a pot with a steamer basket, bring a few inches of water to boil and steam the broccoli for 4-5 minutes. It should be tender but still firm. Remove from the steamer basket and then set aside.
  2. Brown the Beef: In a large pan, over medium-high heat, sauté the beef and onion together until the beef is fully browned. Add in the garlic and sauté another minute. Reduce the heat to medium-low. Drain excess grease when done cooking.
  3. Make the Sauce: While the beef and onion are cooking, whisk together the beef broth, soy sauce, brown sugar, sesame oil, garlic, ginger, and cornstarch in a small bowl.
  4. Combine Sauce with Beef and Broccoli: Add the steamed broccoli to the skillet and pour the sauce over everything. Stir everything together, sautéing until the sauce thickens and coats everything completely.
  5. Serve: Serve over steamed rice. Garnish with green onions and sesame seeds! If you’re feeling spicy, add some red pepper flakes.

Here are some tips for serving this delicious beef and broccoli dish and ways that you can change it up!

  • Make it Spicy: To add heat, add 2 tablespoons of sriracha sauce to the sauce mixture. 
  • Serving Suggestions: I like to serve this dish with rice, but you can also serve it with quinoa or cauliflower rice or just on its own!
  • How to Cook the Rice: If you ask me, the easiest way to cook rice is in your Instant Pot! I love Instant Pot rice because you just set it and forget it. You can also cook the rice over the stove in a pot or in a rice cooker.
  • Add More Veggies: Broccoli is the star of this dish, but you can add other vegetables. Bell pepper, snap peas, or carrots make great additions!

  • Brown Sugar: Balances the tanginess of the bourbon, vinegar, and Worcestershire sauce with a hint of sweetness.
  • Apple Cider Vinegar: Adds bright flavor and also helps to tenderize the meat.
  • Worcestershire Sauce: Includes a blend of vinegar, garlic, chiles, molasses and more for a wonderful umami taste.
  • Garlic: 3 cloves of freshly minced garlic will infuse the steak with savory flavor.

How to Make Grilled Bourbon Steak

Grilled bourbon steaks are really simple to make, and they are loaded with a big punch of flavor! Just be sure to plan enough time for the marinating and resting time. You will want to make these grilled ribeye steaks all season long!

  1. Make the Marinade: In a medium bowl, whisk together the whiskey, brown sugar, vinegar, Worcestershire sauce, garlic, salt and pepper.
  2. Marinate the Steaks: Pour the marinade into a sealable bag, add the steaks to the bag and seal it shut. Allow the steaks to marinate for between 1-4 hours in the fridge.
  3. Heat the Grill: While the steak is marinating, heat a grill up to 400 degrees Fahrenheit. When the steaks have marinated, remove them from the fridge and allow them to rest at room temperature for 30 minutes. Remove the steaks from the bag and discard the marinade.
  4. Grill the Steaks: Brush the grill with oil and grill the steaks about 4-5 minutes per side. The internal temperature should reach between 120-155 degrees fahrenheit, depending on how rare you’d like the steak to be.
  5. Let Rest and Serve: Remove the grilled steaks from the grill and place on a clean plate to cool for at least 5 minutes before serving.

Tips for the Best Grilled Bourbon Steak

  • Other Steak Varieties: You can also use strip steak or New York steak for this recipe.
  • Cooking the Steak: Pay attention to how long you cook your steak to have it cooked to your preferred doneness. My steaks were 1-inch thick and I ended up cooking them for 4 minutes on each side at 400 degrees on the grill and they came out medium.
  • Use a Meat Thermometer: Using a thermometer is the best way to know when the steak has reached your desired temperature. Refer to my graphic in this guide for how to ribeye for temperatures of each level of steak doneness. You’ll also find more tips and tricks listed!
  • Allow Steak to Rest: For the juiciest, most tender steak, be sure to rest the ribeye after cooking. This allows the juices to reabsorb and distribute throughout the meat.
