Crispy Potato Skins

These homemade potato skins are so simple to make and come together so quickly for your next dinner or party. Make the perfect side dish with all the flavor and watch them disappear quicker than you made them. Potato skins are a MUST make!

Homemade Potato Skins Ingredients:

Russet potatoes are known to be thicker and hold together the best for these potatoes. They are a stronger potato to cut and hollow out. Stuff your potato with all the goods and bake until perfection!

  • Potatoes:ย Russetย potatoes are the bestย because there larger andย 
  • Olive Oil: This coats the skins of the potatoes and creates a crispy outside.
  • Salt and Pepper: To Taste!
  • Cheddar Cheese: Sprinkle over top of the baked potato.
  • Bacon: Cook and crumble pieces.
  • Green Onions: Chop and add to the top.
  • Ranch or Sour Cream: Great for dipping or loading the potato skins.

This appetizer or side dish is one of the best and easiest recipes to make for a quick dish to serve. Cut and carefully hallow out each potato skin. This recipe is great even for doubling!

  1. Prepareย Potatoes: Wash and scrub the potatoes.ย Preheat oven to 400 degrees.ย  Prick with a fork and bake for an hour or until tender.ย  Or cook in the microwave for 5 minutes each potato.ย  Let the potatoes cool to the touch.
  2. Bake:ย Cut the potatoes in half.ย  Scoop out the potatoes leaving about 1/4 inch along the sides.ย  Place the potatoes on a baking sheet skin side up and brush with olive oil.ย  Salt and pepper.ย  Bake for about 10 minutes.ย  Flip to the other side and bake an additional 10 minutes or until they start looking golden brown.
  3. Remove and Garnish:ย Remove from the oven and add the cheese.ย  Add back to the oven for 2-3 minutes until the cheese has melted.ย  Top with bacon, green onions and favorite toppings.ย

    These are definitely a 5 by my tastebuds Alyssa. I’m terrible at making sweets anyway, so I made these for church coffee time. I could have made double the amount and they would have all been gone from the exclamations and compliments received. I made sure they were crispy and warm by keeping them in the oven during the church service, then sprinkling on chopped chives to serve. Thank you!

    1. Yep! I did the exact same thing for the recipe. I made the potatoes the night before and then put everything together the next day!
