How Do You Make Creamy Tuscan Tortellini Soup?

You are going to love how quick and easy this tortellini soup recipe is to make! You will love the creamy base and everything inside is so delicious. It only takes 25 minutes, and dinner is served! It all comes together perfectly and is SO delicious!

  1. Melt the butter in a large pot over medium heat. Add diced onion and cook until translucent and tender. Add the garlic and cook for 30 seconds until fragrant.
  2. Add the chicken broth, diced tomatoes, white beans, parmesan cheese, Italian seasoning, salt and pepper.
  3. Pour in the heavy cream and slowly heat the soup to a simmer.
  4. Stir in the shredded chicken, cheese tortellini, and spinach, then simmer the soup for 10 minutes to thicken and allow the tortellini to cook. Taste and adjust the salt and pepper if needed. Enjoy!

How to Store Leftover Tortellini Soup

This creamy Tuscan garlic tortellini soup makes great leftovers! As you store the soup, the flavors continue to meld and become more delicious. Itโ€™s so easy to reheat and makes the perfect lunch or dinner for chilly winter days.

  • In the Refrigerator: Once completely cooled, add to a ziplock bag or airtight container and store in the refrigerator for 3 to 4 days. If you make this soup ahead of time, wait to add the tortellini when you reheat the soup.
  • To Reheat: Thaw frozen soup in the refrigerator overnight, or place the ziplock bag in a bowl of hot water. Once thawed, transfer the soup to a pot or slow cooker and heat until warmed through. If you left out the tortellini, add it now and cook for a few minutes before serving.

    I made this recipe once a while ago and since then everyone is asking for the recipe every time I make it. It is delicious with and without the chicken. The vegetarians in my family love the meatless version where I replaced the chicken broth with the vegetable broth.

    I made this as written but…….it seemed like 2 different dishes put in one pot. I found the tortellini too heavy and overpowering in it. The soup without it is fantastic. I have actually taken out the pasta and will add some pasta sauce to it for another meal instead.

    My all time favorite soup!!! So hearty! I donโ€™t add the beans and instead do riced cauliflower. I also add just 1 can of diced tomatoes. It is the best !! My kids and friends rave about it !

      I canโ€™t remember if Iโ€™ve reviewed this but itโ€™s my favorite soup and I make it all the time! I add Italian sausage and it really kicks it up a notch! Or sometimes make it with just Italian sausage instead of chicken. So good thank you so much for this recipe!
